This hearty and flavorful dish features tender breaded meat topped with a savory mushroom and paprika sauce, creating a satisfying meal reminiscent of the cozy Austrian countryside. Let’s delve into how to prepare this authentic Mushroom Zigeunerschnitzel that will surely become a favorite at your table.

ℹ️ Ingredients:

  • 4 veal or pork cutlets (about 5.5oz/150g each)
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 4 tablespoons vegetable oil
  • 7oz/200g mixed mushrooms, sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 can (14oz/400g) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon sweet paprika
  • 1 teaspoon smoked paprika
  • 7 fl oz/200ml beef or vegetable broth
  • Chopped fresh parsley, for garnish

ℹ️ Instructions:

  1. Prepare the Schnitzels:
Season the veal or pork cutlets with salt and pepper on both sides.
Dredge each schnitzel in flour, shaking off any excess. Dip them in the beaten eggs, then coat with breadcrumbs, pressing gently to adhere. Set aside.
  2. Cook the Schnitzels:
Heat the vegetable oil in a large skillet over medium-high heat. Fry the schnitzels for about 3-4 minutes on each side until golden brown and cooked through. Transfer to a plate and keep warm.
  3. Sauté the Mushrooms and Vegetables:
In the same skillet, add a bit more oil if needed. Sauté the sliced mushrooms until they are golden brown and tender, then remove them from the skillet and set aside.
Add the sliced onion and minced garlic to the skillet and cook until softened and fragrant.
Stir in the sliced bell peppers and cook for another 2-3 minutes until they begin to soften.
  4. Prepare the Sauce:
Add the diced tomatoes, tomato paste, sweet paprika, and smoked paprika to the skillet, stirring to combine.
Pour in the beef or vegetable broth and bring the mixture to a simmer. Let it cook for about 5 minutes until the sauce thickens slightly.
  5. Combine and Serve:
Return the sautéed mushrooms to the skillet and stir to combine with the sauce.
Place the cooked schnitzels on serving plates and spoon the mushroom and pepper sauce over the top.
Garnish with chopped fresh parsley and serve immediately, accompanied by your favorite side dishes like potatoes or rice.

ℹ️ Cooking Tips:

  • If you don’t have veal or pork schnitzels, you can use chicken schnitzels as a substitute.
  • Adjust the amount of paprika to your taste preference, adding more for extra flavor or less for a milder sauce.
  • Feel free to customize the mushroom selection based on your preferences or what’s available at your local market.
