How to Cook Marinated Pork Ribs in the Oven from Scratch

➡️ Baked ribs in the oven are among the most delicious pork roast recipes. The meat on the ribs is very tender when cooked properly and the roasted fat and the crispy outer crust make it difficult to stop eating these tasty cuts that the pork generously offers us.

➡️ Any type of marinated pork ribs is tasty but baby back ribs have priority when it comes to choosing from them. Even though spare ribs are more fleshy, I often choose to cook baby back ribs because the meat on them is very juicy and can be crunched by holding the ribs between my fingers, which brings extra satisfaction to a heavy eater like me!

What ingredients do you need to cook baked ribs in the oven? (recipe for 4 servings)

Raw Baby Back Ribs

1) 1.5 kg/50 oz of baby back ribs (you can use other pork ribs as well)
2) 2-3 cloves of garlic or to taste, very finely minced, crushed, or ground
3) salt and ground black pepper to taste
4) 1 tsp of dried thyme powder
5) 1/2 tsp of allspice powder
6) 100 g/3.5 oz of concentrated tomato paste
7) 1-2 tbsp of brown sugar, depending on the tomato paste’s sweetness
8) 2 tbsp of olive oil
9) 2-3 tbsp of ketchup or as needed

How to Cook Marinated Pork Ribs in the Oven Step by Step

Baked Ribs In The Oven

➡️ Eager to know how to cook oven-baked ribs? The recipe is very tasty and easy to cook, so I wholeheartedly recommend it!
Below are listed the steps required to cook the baked ribs recipe.

Total Time: 2 hours and 30 minutes

1) Remove the skin from the ribs

remove the membrane from the ribs, this ensures you’re going to cook fall-off-the-bone ribs, then cut the baby back rib chunks into smaller pieces of 3-5 ribs (optional)

2) Prepare the pork ribs marinade

pour the olive oil into a small bowl, add minced garlic, salt, pepper, thyme, allspice, tomato paste, and brown sugar, then stir them energetically to combine them well, add 2-3 spoons or as needed of cold water while stirring to get a slightly viscous consistency of the marinade

3) Marinate the pork ribs

brush the ribs all over with the previously prepared marinade

4) Seal the ribs in aluminum foil

place each pork ribs chunk on separate aluminum foil and seal them well, so that the steam produced while baking remains inside, then place the packages into the fridge for a couple of hours or overnight (optional)

5) Put the ribs into the oven

place the packages on a tray, then put the tray into the preheated oven at 180C/360F for about 2 hours. flip the packets after 1 hour for better cooking

6) Complete the baked ribs in the oven

unwrap the top of the packets and grease the upper side of the ribs with ketchup so that it forms an even thin layer, raise the oven temperature to 290C/550F and roast the ribs until the crust turns reddish brown

8 PRO Tips for the Oven-Baked Pork Ribs Recipe

  • take the ribs out of the fridge 1 hour before marinating them, the flavors will get better into the meat
  • do not skip the step of removing the skin from the ribs, it is quite gummy and will prevent the baked ribs from becoming particularly tender
  • if it’s easier for you to work with smaller chunks, cut baby back ribs into 2 or 3 pieces
  • you can reduce the amount of garlic according to your tastes
  • if you don’t like the taste of tomatoes or you want to vary the way you cook pork ribs, you can replace the tomato paste with mustard and you already have another recipe!
  • if you have time, put the marinated ribs in the fridge for a few hours or even overnight so that the flavors are soaked up deeper into the meat
  • wrapped in foil, baby back ribs can be baked on the grill, not only in the oven, and then can be completely unpacked and fried on the gas or charcoal grill
  • prepare a raw vegetable salad near the baked ribs in the oven, they will become even more appetizing
