Barbecue Steaks

➡️ I’m so happy when spring comes! Why? Simply because I can start my grilling season and make barbecue steak! Even if you can make steak on the stove and in the oven, the meat grilled on charcoal has a delightful taste due to the smoke that adds a unique aroma, which I simply adore!

➡️ Therefore, on the first warm days of spring, I am already organizing a barbecue party with family and friends to enjoy some grilled meat. Of course, I also prepare some salads with fresh vegetables, as only spring is the season richest in veggies and we have a unique opportunity to replenish our reserves of minerals and vitamins.

➡️ I love barbecue steaks, both beef, and pork, but also spring lamb. Needless to say, I have lots of marinades for each meat type to prepare steaks with various flavors and herbs, which, by the way, are also exuberant in springtime and help me enjoy some of the best steaks of the year.

  • 4 pork steaks (about 1 inch thick)
  • 1/2 cup barbecue sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp  paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (optional, for heat)

  • In a small bowl, mix together the olive oil, minced garlic, paprika, black pepper, salt, and cayenne pepper (if using). This will be the seasoning rub for the pork steaks.
  • Rub the seasoning mixture all over the pork steaks, making sure to coat both sides evenly. Let them sit for about 10 minutes to allow the flavors to penetrate the meat.
  • Preheat the grill to medium-high heat and lightly oil the grates.
  • Place the seasoned pork steaks on the grill and cook for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C) for medium-rare or 160°F (71°C) for medium doneness. Adjust the cooking time according to your desired level of doneness.
  • During the last few minutes of grilling, brush the barbecue sauce onto both sides of the pork steaks, allowing it to caramelize and create a flavorful glaze.
  • Once cooked to your desired doneness and glazed with barbecue sauce, remove the pork steaks from the grill and let them rest for 3-5 minutes.
  • Slice the barbecue steaks against the grain and serve them hot with additional barbecue sauce on the side.
  • Enjoy your delicious barbecue steaks with pork!

Cooking Tips:
  1. Preheat the grill to medium-high heat for about 10-15 minutes before cooking to ensure proper searing and char on the steaks.
  2. Marinate the pork steaks in the barbecue sauce for at least 30 minutes or up to overnight to enhance the flavor and tenderness.
  3. Brush the grill grates with oil or use a non-stick cooking spray to prevent the steaks from sticking and to achieve those beautiful grill marks.
  4. Let the pork steaks rest for a few minutes after grilling before slicing or serving. This allows the juices to redistribute and ensures juicier and more flavorful meat.
  5. Serve the barbecue steaks with your favorite side dishes like grilled vegetables, corn on the cob, or a fresh salad for a complete and satisfying meal.

FAQs about Barbecue Steaks

What is the best cut of meat for barbecue steaks?

The best cuts of meat for barbecue steaks are typically those with good marbling and tenderness, such as ribeye, New York strip, or filet mignon. These cuts offer a perfect balance of flavor and tenderness when cooked on the grill.

How do I season barbecue steaks?

Seasoning barbecue steaks is simple and can be done with a basic blend of salt, pepper, and garlic powder. However, you can also experiment with various dry rubs or marinades to enhance the flavor. Just be sure to apply the seasoning generously and let the steaks rest for some time to absorb the flavors before grilling.

How long should I marinate barbecue steaks?

The marinating time for barbecue steaks depends on the thickness and type of steak. Thinner cuts may require 30 minutes to an hour, while thicker cuts can benefit from marinating for several hours or even overnight. Keep in mind that acidic marinades, like those containing citrus juice, should be used for shorter duration to prevent the meat from becoming mushy.

What temperature should I grill barbecue steaks?

For medium-rare to medium doneness, preheat your grill to a medium-high heat of around 400°F (200°C). This temperature allows for a nice sear on the outside while keeping the interior juicy and tender. However, it’s always recommended to use a meat thermometer to ensure the steaks reach an internal temperature of 135°F to 145°F (57°C to 63°C) for medium-rare to medium.

How long should I grill barbecue steaks?

Grilling time for barbecue steaks varies depending on the thickness of the steaks and your desired level of doneness. As a general guideline, you can grill a 1-inch-thick steak for about 4-5 minutes per side for medium-rare. Increase the cooking time for a more well-done steak or adjust it based on your preference. Remember to flip the steaks only once during cooking to develop a nice crust.

Should I rest barbecue steaks after grilling?

Yes, it’s crucial to let barbecue steaks rest for a few minutes after grilling. This allows the juices to redistribute throughout the meat, resulting in a juicier and more flavorful steak. Tent the steaks loosely with foil and let them rest for about 5-10 minutes before slicing or serving.

Can I use a gas grill or charcoal grill for barbecue steaks?

Absolutely! Both gas and charcoal grills can be used to cook delicious barbecue steaks. Gas grills offer convenience and precise temperature control, while charcoal grills provide a smoky flavor that many steak enthusiasts enjoy. Whichever type of grill you prefer, ensure it reaches the recommended temperature and follow proper grilling techniques for the best results.
