1) 1 kg/35 oz of potatoes
2) 100 ml/3.5 fl oz of sunflower oil or 2-3 tbsp of pork lard
3) some coarse salt to taste

1) boil potatoes with the skin on in salted water until slightly soft
2) drain the water and wait until potatoes cool to room temperature or are lukewarm, then peel off and cut them into medium-sized rounds or cubes
3) place oil or pork lard into a frying skillet, wait to warm up, then add potatoes and season them with some salt to taste (optional)
4) fry potatoes over very high temperature until are golden brown on the bottom side, flip them carefully to avoid breaking them too much, then continue frying until they are evenly browned
5) take cottage fries out from the skillet and drain well excessive oil or lard
6) sprinkle over potatoes some dried tarragon and ground black pepper to taste (optional), then serve them immediately
