Potatoes are some of the most cooked vegetables in many parts of the world. This is because they are relatively inexpensive and can be cooked in many ways. One of the most popular potato dishes is fried potatoes.
Of course, the most famous fried potatoes are French fries, which actually seem to be Belgian, but I do not open here this controversial topic.
However, there are many other fried potato recipes that are also called home fries or cottage fries due to their rustic origin.
On this page I share with you a basic home fries recipe, very similar to those prepared today in many households in the countryside.
Having cottager origins, this basic home fries recipe is very simple and includes few ingredients for seasoning.
In essence, all you have to do is boil the potatoes in their skins, fry them a little in oil or pork lard (the authentic version) and season them with tarragon, one of the aromatic plants that go perfectly with potatoes.
Therefore, cooking them will take you very little time because while boiling potatoes you can do other things around the household.
This basic home fries recipe is a perfect choice for making a garnish that goes exceptionally well with any type of pork, chicken, or turkey roast. As such, I recommend that you introduce it in your basic recipe list and use it as often as possible to cook simple, tasty, and consistent food for your family and friends!

Home fries (US), house fries (US), American fries (US), fried potatoes (UK, Canada and regional US), Bratkartoffeln (German), bistro potatoes (southeastern US), or peasant potatoes are a type of basic potato dish made by pan- or skillet-frying chunked, sliced, wedged or diced potatoes that are sometimes unpeeled and may have been par-cooked by boiling, baking, steaming, or microwaving. They are sometimes served as a substitute for hash browns.
Home fries (or fried potatoes) are often paired with onions.
In North America, home fries are popular as a breakfast side dish.Home fries (https://en.wikipedia.org/wiki/Home_fries)
Potatoes are a versatile root vegetable and a staple food in many households.
Potatoes are relatively cheap, easy to grow and packed with a variety of nutrients.
1. Packed With Nutrients
Potatoes are an excellent source of many vitamins and minerals.
Potatoes are packed with vitamins and minerals, though the variety and preparation method can affect the nutritional content.
2. Contain Antioxidants
Potatoes are rich in compounds like flavonoids, carotenoids and phenolic acids (4).
These compounds act as antioxidants in the body by neutralizing potentially harmful molecules known as free radicals. When free radicals accumulate, they can increase the risk of chronic diseases like heart disease, diabetes and cancer (5).
For example, a test-tube study found that the antioxidants present in potatoes may suppress the growth of liver and colon cancer cells (6).7 Health and Nutrition Benefits of Potatoes (https://www.healthline.com/nutrition/benefits-of-potatoes)
