White Beans

1) 1 kg/35 oz of white beans, dried or canned (you can use another bean type too)
2) 0,5 kg/17 oz of smoked bacon
3) 150 g/5 oz of yellow onions
4) 150 g/5 oz of carrots
5) 150 g/5 oz of celery ribs
6) 2-3 garlic cloves or to taste
7) 300 g/10 oz of canned chopped peeled tomatoes
8) some salt and ground black pepper to taste to taste
9) 100 ml/3.5 fl oz of sunflower oil or another vegetable oil with a neutral aroma
10) some fresh parsley leaves to taste

Homemade Bean and Bacon Soup

Below are listed the steps required to cook my homemade bean and bacon soup recipe.

Total Time: 1 hour and 15 minutes

1) Boil the beans until half cooked

Place the beans into a pot, fill it up with water and boil the beans over a medium temperature until half cooked, then drain them completely (about 30 minutes).
If you’re using canned beans, open the cans, drain the liquid completely and rinse the beans very well.

2) Trim and fry the bacon

In the meantime, dice the bacon into small pieces, pour oil into a pan and fry the bacon over a medium-high temperature until crunchy. Use a lid on the pan to avoid being splashed with hot oil!
When ready, remove the bacon from the pan, drain it well, and set it aside.

3) Prepare the veggies for cooking

Peel and chop the carrots, onions, and garlic finely, then chop the celery ribs as well.

4) Simmer the veggies

Place the veggies in the same pan that you used for bacon and simmer them over a low temperature until slightly soft (about 5 minutes or so).

5) Place the veggies into the pot and start boiling the soup

After you drained the beans, place the softened veggies over them, then open the tomato can and pour the content over the other ingredients.
Pour the pot with lukewarm water so that it covers the veggies, season with some salt, and boil the soup for about 15 minutes over a low temperature.

6) Add the fried bacon to the pot

Add the bacon to the pan and continue boiling the soup for about 30 minutes or until the bean is very tender and begins to crush. Pour a bit of hot water if needed.

7) Complete the bean and bacon soup

Grind some black pepper into the soup when ready, then chop the parsley leaves and sprinkle them over the soup when serving it.
