Ingredients
- 125/3.5 oz/kg beef neck or another juicy beef cut
- 35/1 oz/kg yellow onions, chopped
- 6 garlic cloves or to taste, chopped or minced
- 5 tbsp all-purpose flour
- 5 tbsp vegetable oil with a neutral flavor such as sunflower oil
- 23/700 fl oz/ml red wine
- some salt and ground black pepper to taste
- 1 tsp coriander powder
- ½ tsp nutmeg powder
- 1 tsp ginger powder
- 2 dried bay leaves
- 35/1 oz/kg dried plums (prunes)
- fresh greenery for garnish (optional)
Instructions
- cut the beef into medium pieces.
- coat beef pieces with flour all over.
- fry the beef in hot oil until golden.
- add chopped onions and garlic, then simmer them for 10 minutes or until soft.
- reduce temperature to low and pour the wine.
- season with salt and ground pepper to taste.
- add the coriander powder, nutmeg powder, and ginger powder, as well as the bay leaves.
- add the plums and some lukewarm water or beef broth if needed.
- simmer the beef stew until the sauce is low and pretty thick (about 1.5-2 hours) and the meat is very tender.
- sprinkle some fresh greenery for added flavor (optional) and serve the stew with your preferred side dish.
