Homemade Calzone Bolognese Recipe with Mushrooms

Calzone Bolognese is a savory and satisfying Italian dish that is perfect for a cozy night in or a casual gathering with friends and family. This hearty calzone is filled with rich Bolognese sauce, earthy canned mushrooms, and gooey melted cheese, all wrapped up in a crispy and golden pizza dough.
The Bolognese sauce, also known as ragù alla bolognese, is the star of this recipe. This meat-based sauce hails from the city of Bologna in northern Italy and is typically made with ground beef, pork, or a combination of both, along with tomatoes, onions, carrots, and celery. The sauce is simmered slowly for hours, which allows the flavors to meld together and create a deep and complex taste.
To make the calzone, the Bolognese sauce is spooned onto rolled-out pizza dough, along with canned mushrooms and grated cheese. The dough is then folded over and sealed to create a half-moon shape, which is baked until crisp and golden. The result is a delicious and satisfying meal that will leave you feeling full and content.
To achieve the perfect calzone, there are a few cooking tips to keep in mind. First, make sure to roll out the pizza dough evenly to ensure that the calzone bakes evenly and is crispy throughout. Second, be sure to seal the edges of the calzone tightly to prevent any filling from leaking out during baking. Third, let the calzone cool for a few minutes before slicing into it, as this will help it hold its shape and prevent the filling from spilling out.
Fourth, consider adding some fresh herbs, such as basil or oregano, to the filling for extra flavor. Lastly, serve the calzone with a side of marinara sauce or extra Bolognese sauce for dipping.
Calzone Bolognese is a delicious and comforting meal that is perfect for any occasion. The combination of rich Bolognese sauce, earthy mushrooms, and melted cheese, all wrapped up in crispy pizza dough, is sure to satisfy any appetite. By following these cooking tips, you can create a perfect calzone every time, and impress your guests with your culinary skills.

  • 12 oz pizza dough, homemade or bought
  • 21 oz Bolognese sauce, homemade or bought
  • 4.2 oz canned mushrooms, rinsed and drained
  • 4.2 oz grated cheese (Parmesan, Cheddar, or another similar cheese type of your choice)
  • salt and ground black pepper or hot chili pepper to taste

  • make Bolognese sauce and wait to cool (you can use leftover Bolognese sauce or store bought sauce)
  • make pizza dough or unpack the commercial pizza base you bought in the store (view how to make pizza dough with yeast and how to make pizza dough without yeast)
  • spread pizza dough into a sheet of 2-3 cm/0.8-1.2 inches in thickness
  • use a turnover mold or a round shape such as a plate (of about 15 cm/6 inches diameter) to cut 6 pieces of dough out
  • place over each dough piece about 2 spoons of Bolognese sauce (around 100 g/3.5 oz), season it with some salt if needed
  • add over the sauce layer a spoon of canned mushrooms and a spoon of grated cheese (about 20 g/0.7 oz each)
  • grind over cheese some black pepper or hot chili pepper to taste for a spicy taste (optional)
  • fold the pizza dough with the mold or by hand so that the stuffing remains inside, then merge the two pizza dough layers and seal the edge by pressing it with the mold or with a fork
  • continue identically with the remaining ingredients, you’ll have in the end about 6 calzone pizzas
  • coat a tray with baking paper, then place calzones on it
  • poke several holes with a fork to let the steam escape during baking
  • place the tray in the preheated oven and bake Bolognese calzone pizza until golden on top (approximately 20-25 minutes)
  • remove the tray from the oven and wait about 15 minutes before serving to cool a bit calzone and to harden both Bolognese sauce and cheese from inside

Cooking Tips:
  • Use a high-quality Bolognese sauce. The sauce is the star of this dish, so it’s important to use a sauce that’s rich in flavor and has the right consistency. If you don’t have time to make the sauce from scratch, use a store-bought sauce that’s made with quality ingredients.
  • Drain canned mushrooms well. Canned mushrooms can be quite moist, so it’s important to drain them well before using them as a filling. You don’t want excess liquid in your calzone, which can make it soggy.
  • Use a generous amount of cheese. The cheese helps hold everything together and adds flavor, so don’t be shy with it. Use a mix of grated Parmesan and mozzarella for the best results.
  • Be careful not to overstuff the calzone. It’s tempting to fill the pastry with as much filling as possible, but be careful not to overstuff it. The pastry won’t cook evenly if it’s too full, and it can burst open during baking.
  • Preheat your oven properly. Make sure your oven is preheated to the right temperature before baking the calzone. This ensures that the pastry cooks evenly and turns golden brown.
