Braised Short Ribs
Ingredients
- 6 bone-in beef short ribs (about 5-6 pounds)
- salt and freshly ground black pepper
- 2 tbsp olive oil
- 2 medium onions, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups dry red wine
- 4 cups beef broth
- 2 bay leaves
- 1 tbsp chopped fresh thyme leaves
- 1 tbsp chopped fresh rosemary leaves
Instructions
- Preheat the oven to 350°F.
- Season the short ribs generously with salt and black pepper.
- In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.
- Add the short ribs to the pot and brown on all sides, about 8-10 minutes total.
- Remove the short ribs from the pot and set them aside.
- Add the onions, carrots, celery, and garlic to the pot and sauté until the vegetables are softened, about 5 minutes.
- Add the tomato paste and stir to combine with the vegetables.
- Pour in the red wine and beef broth, stirring to combine.
- Add the bay leaves, thyme, and rosemary to the pot.
- Return the short ribs to the pot and spoon some of the liquid over the top of them.
- Cover the pot with a tight-fitting lid and place it in the preheated oven.
- Braise the short ribs for 3 hours, or until the meat is tender and falling off the bone.
- Remove the pot from the oven and skim any fat off the top of the liquid.
- Use tongs to carefully remove the short ribs from the pot and place them on a serving platter.
- Strain the cooking liquid through a fine-mesh sieve and discard the solids.
- Return the strained liquid to the pot and simmer over medium heat until it has reduced and thickened slightly, about 15-20 minutes.
- Pour the reduced sauce over the short ribs and serve hot.
