Ingredients
  

  • 6 bone-in beef short ribs (about 5-6 pounds)
  • salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 2 medium onions, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 cups dry red wine
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tbsp chopped fresh thyme leaves
  • 1 tbsp chopped fresh rosemary leaves

Instructions
 

  • Preheat the oven to 350°F.
  • Season the short ribs generously with salt and black pepper.
  • In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.
  • Add the short ribs to the pot and brown on all sides, about 8-10 minutes total.
  • Remove the short ribs from the pot and set them aside.
  • Add the onions, carrots, celery, and garlic to the pot and sauté until the vegetables are softened, about 5 minutes.
  • Add the tomato paste and stir to combine with the vegetables.
  • Pour in the red wine and beef broth, stirring to combine.
  • Add the bay leaves, thyme, and rosemary to the pot.
  • Return the short ribs to the pot and spoon some of the liquid over the top of them.
  • Cover the pot with a tight-fitting lid and place it in the preheated oven.
  • Braise the short ribs for 3 hours, or until the meat is tender and falling off the bone.
  • Remove the pot from the oven and skim any fat off the top of the liquid.
  • Use tongs to carefully remove the short ribs from the pot and place them on a serving platter.
  • Strain the cooking liquid through a fine-mesh sieve and discard the solids.
  • Return the strained liquid to the pot and simmer over medium heat until it has reduced and thickened slightly, about 15-20 minutes.
  • Pour the reduced sauce over the short ribs and serve hot.
