How to Make a Mushroom Sauce without Cream from Scratch

What ingredients do you need for the brown mushroom gravy? (4 servings)

Chopped Canned Mushrooms

1) 250 g/9 oz of canned mushrooms, rinsed and drained
2) 60 g/2.5 oz of red onions, finely chopped
3) 2 tbsp of olive oil
4) some salt and ground black pepper to taste
5) 300 ml/10 fl oz of chicken stock or vegetable stock
6) 1-2 tbsp of cornstarch or all-purpose flour
7) 1 small parsley leaves bundle, chopped

How to make brown mushroom gravy from scratch in 6 steps?

Brown Mushroom Gravy

step 1: heat olive oil in the pan over medium temperature, then add the chopped onion and fry it until glassy (2-3 minutes)
step 2: add the mushrooms to the pan and continue frying for 2-3 minutes
step 3: pour the stock into the pan
step 4: season the gravy with some salt and ground black pepper and simmer it until lowers (5-10 minutes)
step 5: sprinkle cornstarch as needed and simmer the gravy while stirring until it thickens (2-3 minutes)
step 6: sprinkle chopped parsley over the brown mushroom gravy before serving

6 PRO Tips for the Brown Mushroom Gravy Recipe Without Sour Cream

  • I recommend using chopped canned mushrooms for this gravy recipe due to the shorter cooking time, but you can use also whole canned mushrooms and even fresh mushrooms that you have to fry previously
  • fry the red onions over a medium temperature to avoid burning and add the mushrooms to the pan immediately as the onion is glassy
  • I prefer using chicken stock for the added chicken flavor, however, you can use vegetable stock for a vegan version of the recipe or even water
  • because I use this brown gravy to top other dishes, I prefer to season it basically, still, you can add more flavors as desired when you season it
  • the amount of cornstarch or flour depends on the liquid level from the pan and your preferences, this ingredient can be skipped as well if you like eating a very low sauce
  • the use of chopped parsley is not mandatory, I like to add chopped greenery for the added aroma and freshness
