Fresh Tomatoes and Cucumbers

1) 200 g/7 oz of green cucumbers
2) 150 g/5.5 oz of yellow bell peppers
3) 200 g/7 oz of fresh tomatoes
4) 100 g/3.5 oz of yellow onions
5) 200 g/7 oz of Bulgarian white brine cheese, which is very similar to feta cheese
6) 2-3 tbsp of white wine vinegar or to taste
7) some chopped parsley leaves for garnishing
8) 1 hot chili pepper (optional)

Bulgarian Salad Shopska

step 1: cut green cucumbers into medium-sized cubes
step 2: remove the stub and seeds from bell peppers, then cut them into strips
step 3: peel onions and cut them into strips
step 4: cut tomatoes into medium-sized cubes and place them into the bowl
step 5: pour white wine vinegar over vegetables in the bowl
step 6: grate white brine cheese over vegetables in the bowl
step 7: sprinkle some finely chopped parsley over the cheese
step 8: optionally, top the Bulgarian salad with a hot chili pepper

➡️ 6 PRO tips for the Bulgarian salad Shopska 🔎

  • Bulgarians make this salad with typical white brine cheese from this Balkan country that you probably won’t find in the store, BUT you can replace it successfully with feta cheese, which is very similar excepting that feta is softer and it can be grated with difficulty, so you can break it into small pieces with your fingers
  • the vegetables should be coarsely chopped into larger pieces
  • I saw so-called Bulgarian Shopska salad recipes on the internet that contain olive oil and even olives among ingredients! NOT BY A LONG SHOT! In the Shopluk region of Bulgaria, where it comes from this veggie salad, don’t grow olive trees and the local gastronomy doesn’t use olive oil, so avoid these ingredients if you want to make an authentic Shopska salad!
  • actually, no vegetable oil is used in the authentic recipe during preparation (many people don’t know that oil softens the fresh veggies!), still some pour oil right before serving it at the table
  • in the authentic Shopska recipe, fresh parsley leaves are mixed with the raw vegetables or sprinkled on the top, just like in my video
  • serve the Bulgarian Shopska salad short time after it’s ready because the fresh vegetables oxidize very quickly and soften, having an unpleasant texture
