1) 500 g17 oz of peeled potatoes
2) 300 m10 fl oz of sunflower oil for frying
3) 50 g/2 oz of butter
4) 1 tbsp of all-purpose flour
5) 300 ml/10 fl oz of HOT cow milk
6) 1 tsp garlic powder or 2-3 garlic cloves (crushed, minced, or grated)
7) 1/2 tsp of ground white pepper or to taste
8) some salt to taste
9) 200 g/7 oz of grated cheese (Mozzarella, Parmesan, Gruyere)
Step 1: after peeling the potatoes, cut them into fries
Step 2: pour oil into the pan and wait for it to heat up
Step 3: put the fries in the pan
Step 4: dip the fries completely in hot oil and fry them for 4-5 minutes over a very high temperature
Step 5: turn the fries and fry them for 2-3 minutes more
Step 6: take the fries out from the pan and drain the oil well
Step 7: melt the butter at a high temperature
Step 8: reduce the temperature, add the flour, and stir continuously for about 1 minute
Step 9: gradually pour HOT milk while stirring
Step 10: reduce the temperature to a minimum, add garlic, salt, and pepper, then mix
Step 11: add the cheese to the saucepan and mix the ingredients
Step 12: stir the sauce continuously until it starts bubbling
Step 13: pour the cheese sauce over the French fries
