Unboiled Penne Rigate Pasta

1) 700 g/25 oz of zucchini
2) 500 g/17 oz of penne rigate pasta
3) 2 tbsp of olive oil
4) 10 g/0.35 oz of butter
5) 4-5 garlic cloves or to taste (chopped, crushed, grated, or minced)
6) 700 g/25 oz of sour cream (12% fat)
7) some salt and ground white pepper to taste
8) a few fresh basil leaves or 1 tsp of dried basil
9) 300 g/10 oz of grated cheese (Parmesan, Cheddar, or another similar type)

Zucchini Pasta Bake

step 1: peel zucchini off
step 2: boil pasta in salted water until soft as recommended on the package
step 3: cut zucchini into medium cubes
step 4: heat the oil up, then add zucchini to the pan
step 5: add chopped garlic over zucchini cubes and fry ingredients until soft (about 5 min), then cool them for about 10 minutes
step 6: drain well and cool pasta for about 10 minutes
step 7: season sour cream with salt and white pepper, then add the basil leaves broken into small pieces by hand
step 8: combine ingredients very well by hand
step 9: add the drained pasta over fried zucchini and combine ingredients thoroughly
step 10: add half of the zucchini pasta into a buttered baking casserole and spread it into a layer
step 11: spread half the grated cheese into a layer
step 12: spread half the sour cream into a layer
step 13: place the rest of the zucchini pasta into a layer
step 14: make another sour cream layer
step 15: spread the rest of the cheese on top
step 16: bake the cheesy zucchini pasta in the oven at 200 Celsius degrees or 390 Fahrenheit degrees until golden on top (this takes usually 30-40 minutes, depending on your oven)

  • peeling zucchini is not really mandatory, still, I like more cooking peeled zucchini because its peel is pretty bitter
  • I recommend using penne rigate because this pasta variety is empty on the inside, however, if you don’t have this type you can use another pasta assortment like spaghetti
  • use a garlic amount that fits your taste, however, keep in mind that zucchini is really great combined with a pretty strong garlic aroma; the same applies to basil
  • I like to separate the zucchini pasta in two layers with a layer of sour cream and cheese between them because in this way the food is much tastier because the flavors combine better
  • as a variety of this recipe, Parmesan cheese can be replaced with feta, but in this case, do not add salt in sour cream and water in which you boil pasta
  • basil matches excellently zucchini, but if you don’t like it or you don’t have it at hand, you can use other aromatic herbs such as dill
  • to grease the baking casserole, you can replace the butter with olive oil
  • after the cheesy zucchini pasta bake is golden on top, I recommend you take the casserole out of the oven and wait 15-30 minutes before serving so that the pasta takes time to better absorb the sour cream and the melted cheese to harden a little
