Fresh Cherries

1) 400 g/14 oz of puff pastry dough
2) 6 tsp of semolina
3) 250 g/9oz of seedless cherries
4) 8 tsp of brown sugar
5) 1 tsp of cinnamon or cardamom powder
6) 1 egg, beaten

Cherry Turnovers with Puff Pastry

Step 1: unpack the puff pastry dough
Step 2: split the dough sheet into 6 pieces
Step 3: place 1 tsp of semolina on each dough piece
Step 4: place 4-5 cherries on each dough piece
Step 5: do add 1 tsp of sugar to each dough piece
Step 6: sprinkle a pinch of cinnamon or cardamom powder over each dough piece
Step 7: turn each dough piece over
Step 8: press with a fork all non-attached sides to seal them
Step 9: place cherry turnovers on a baking paper-lined tray
Step 10: flatten the turnovers by pressing them gently with your palm
Step 11: brush turnovers with beaten egg
Step 12: make 2 notches in each turnover
Step 13: sprinkle a pinch of brown sugar over each cake piece
Step 14: place the tray in the preheated oven at 200C/390F until golden (about 10-15 min)

When preparing phyllo dough, a small amount of oil or melted fat (usually butter) is brushed on one layer of dough and is topped with another layer, a process repeated as often as desired. When the phyllo bakes it becomes crispy, but since it contains somewhat less water, does not expand to the same degree as puff pastry. Puff pastry also differs from Austrian strudel dough, or Strudelteig, which more closely resembles phyllo.
