How to Cook Chicken and Rice Bake in the Oven from Scratch

What ingredients do you need to cook chicken and rice bake? (recipe for 4 servings)

Boneless Skinless Chicken Breast Fillet

1) 400 g/14 oz of skinless boneless chicken breast (4 chicken fillet pieces)
2) 600 g/21 oz of long-grain white rice
3) 100 g/3.5 oz of yellow onions
4) 500 ml/17 fl oz of chicken stock
5) some salt and ground black pepper to taste
6) 1 tsp of ginger powder
7) 1 tsp of Provence spice mixture
8) a small bunch of parsley leaves

How to Cook Chicken and Rice Bake Step by Step

Below are listed the steps required to cook the baked chicken and rice casserole recipe.

Total Time: 1 hour

1) Chop the onions

Peel the onions and chop them finely by knife or food processor.

2) Wash the rice

Wash the rice well and remove any impurities if needed.

3) Heat up the chicken stock

Cook chicken stock or heat it up until lukewarm, then season it with a bit of salt as needed.

4) Mix rice and onions

Place the rice and onions into a heat-proof dish, combine and spread them into a layer.

5) Pour the chicken stock into the dish

Pour the chicken stock into the dish, add a bit more warm water if necessary for the rice to be completely dipped in the liquid.

6) Rub chicken breast fillets with salt

Rub the chicken breast with salt all over to get better inside, then place them over the rice.

7) Flavor the chicken breast

Grind some black pepper over the chicken breast fillets, then sprinkle over them the ginger powder and Provence spice mixture.

8) Place the dish in the oven

Place the dish in the preheated oven at 190C/380F and wait until the rice is soft, the liquid in the dish is very low, and the chicken breast is golden brown.

9) Wait until the rice soaks up the liquid

Stop the heat and leave the dish into the oven for about 15-30 minutes or until the rice soaks up the remaining liquid and becomes very fluffy.

10) Top the dish with parsley

Chop the parsley leaves finely and sprinkle them evenly over the baked chicken and rice casserole, then serve the food immediately.

6 PRO Tips for the Chicken and Rice Bake Recipe

  • In my experience, the long-grain rice variety is best for this recipe, but you can use other types of rice if you don’t have it on hand.
  • If you can, leave the skin on the chicken breast, this will make the meat more tender and juicy, not to mention that the fried skin is very crunchy and tasty!
  • Be careful not to drop too much liquid in the casserole until the rice is cooked, if necessary add a little warmish water.
  • Do not rush to serve the baked chicken and rice casserole immediately, leave the dish in the oven long enough for the rice to absorb the remaining chicken broth and become very fluffy and soft.
  • Chicken breast can be replaced with chicken thighs with bone and skin on, the result is just as delicious!
