Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 head of romaine lettuce
  • 2 cups day-old bread, cut into cubes for croutons
  • ½ cup grated Parmesan cheese
  • ¼ cup olive oil
  • 2 cloves of garlic, minced
  • 1 tsp Dijon mustard
  • ½ tsp Worcestershire sauce
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). Toss the bread cubes with 2 tablespoons of olive oil, minced garlic, and a pinch of salt. Spread them on a baking sheet and bake for about 10 minutes or until they are golden and crispy. Set aside.
  • Season the chicken breasts with salt and pepper. Heat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes per side or until cooked through. Remove from the grill, let it rest for a few minutes, then slice it into thin strips.
  • In a small bowl, whisk together 2 tablespoons of olive oil, Dijon mustard, Worcestershire sauce, and half of the grated Parmesan cheese. Season with salt and pepper to taste.
  • Tear the romaine lettuce into bite-sized pieces and place them in a large salad bowl. Add the grilled chicken strips and croutons. Drizzle the dressing over the top and toss everything together until well coated.
  • Sprinkle the remaining Parmesan cheese on top of the salad. Serve immediately, and if desired, garnish with extra croutons and a lemon wedge.
