Boneless Skinless Chicken Breast Fillet

1) 800 g/30 oz of skinless boneless chicken breast (4 fillets)
2) 150 ml/5 fl oz of olive oil
3) 250 g/9 oz of canned peeled chopped tomatoes
4) 2-3 cloves of garlic or to taste (crushed, chopped, or grated)
5) 2 tbsp of tomato puree
6) some salt and ground black pepper to taste
7) 1 tbsp of granulated sugar or to taste
8) 30 g/1 oz of butter
9) 160 g/6 oz of fresh mozzarella, cut into 8 slices
10) some fresh basil leaves to taste

Chicken Caprese

step 1: notch the chicken breast fillets
step 2: heat some oil up and add the chopped tomatoes into the skillet
step 3: toss garlic in and simmer the ingredients for 5 minutes
step 4: pour a little water into the skillet, depending on the chopped tomato consistency
step 5: add the tomato puree to the skillet
step 6: season the ingredients with some salt and ground black pepper to taste
step 7: add some granulated sugar to taste, mix, and simmer the sauce until low (about 5-10 min)
step 8: place butter into another skillet or remove the sauce, wash, and use the same skillet
step 9: place the chicken breast fillets into the skillet with the notched side downwards
step 10: do season the chicken fillets with some salt and pepper to taste, then fry them until golden on the bottom side
step 11: flip the chicken fillets and fry them until evenly golden
step 12: place fried chicken fillets into the tomato sauce skillet or remove them, pour the sauce inside, and place them back
step 13: top the chicken fillets with 2 slices of mozzarella on each, then place the skillet into the oven at 270C/520F to melt the mozzarella (5-10 min)
step 14: take the skillet out of the oven and sprinkle over some fresh basil leaves, then serve the food immediately

  • notch the chicken breast with deeper cuts in the thicker side and shallow cuts in the thinner part, so that the chicken breast thickness is pretty even
  • instead of canned tomatoes, you can also use fresh tomatoes that you have to peel and chop beforehand
  • use a quantity of sugar depending on the acidity of the tomatoes and your tastes, the sauce must be sweet-sour at the end
  • boil the tomato sauce until it has a more viscous consistency but is still slightly fluid
  • fry the chicken fillets to be evenly browned on both sides
  • chicken breast can also be grilled, not only fried in a pan
  • use fresh mozzarella that you have to cut into slices about half a finger thick with which you will top the chicken breast fillets
  • put the pan in the oven only if it has a heat-resistant handle, if you are not sure, better transfer the ingredients to a dish that withstands the temperature in the oven
