  • 2 cups elbow macaroni
  • 2 cups cooked chicken breast, diced

  • ½ cup green bell pepper, finely chopped

  • ½ cup  pineapple tidbits (optional)
  • 1 ½ cup mayonnaise
  • 2 tbsp yellow mustard
  • Salt and pepper to taste

Instructions
 

  • Cook the elbow macaroni according to the package instructions. Drain and set aside to cool.
  • In a large mixing bowl, combine the cooked macaroni, diced chicken, shredded cheddar cheese, chopped green bell pepper, grated carrots, and pineapple tidbits (if using).
  • In a separate bowl, whisk together the mayonnaise, yellow mustard, salt, and pepper until well blended.
  • Pour the mayo-mustard dressing over the macaroni mixture and gently toss until everything is evenly coated.
  • Cover the bowl and refrigerate the salad for at least 2 hours to allow the flavors to meld.
  • Before serving, give the salad a final toss and adjust the seasoning if needed.
