Ingredients
  

  • 4 boneless, skinless chicken breasts

  • 1 egg, beaten
  • 1 cup crushed tomatoes
  • 2 cloves garlic, minced
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese
  • fresh basil, chopped, for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine the flour, Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well.
  • Dip each chicken breast in the beaten egg, then coat in the almond flour mixture, making sure to cover both sides.
  • Place the chicken breasts on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the chicken is cooked through and the coating is crispy.
  • In a small saucepan, combine the crushed tomatoes, garlic, basil, oregano, salt, and pepper. Cook over medium heat, stirring occasionally, for 5-7 minutes, or until the sauce has thickened slightly.
  • Spoon the sauce over the chicken breasts, then sprinkle with shredded mozzarella cheese.
  • Return the chicken to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh chopped basil and serve hot.

Notes
