Healthy Chicken Parmesan Recipe
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour or almond flour
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten
- 1 cup crushed tomatoes
- 2 cloves garlic, minced
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded mozzarella cheese
- fresh basil, chopped, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the flour, Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well.
- Dip each chicken breast in the beaten egg, then coat in the almond flour mixture, making sure to cover both sides.
- Place the chicken breasts on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the chicken is cooked through and the coating is crispy.
- In a small saucepan, combine the crushed tomatoes, garlic, basil, oregano, salt, and pepper. Cook over medium heat, stirring occasionally, for 5-7 minutes, or until the sauce has thickened slightly.
- Spoon the sauce over the chicken breasts, then sprinkle with shredded mozzarella cheese.
- Return the chicken to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh chopped basil and serve hot.
Notes
- Pound the chicken breasts to an even thickness before coating them. This will ensure that they cook evenly and stay juicy.
- Use a non-stick baking sheet or line your baking sheet with parchment paper to prevent the chicken from sticking.
- Make sure your oven is fully preheated before baking the chicken. A hot oven ensures that the coating will get crispy and golden brown.
- Don’t over-bake the chicken or it will become dry. Use a meat thermometer to ensure that the chicken has reached an internal temperature of 165°F (75°C).
- If you prefer a spicier dish, add a pinch of red pepper flakes to the sauce.
