Ingredients
  

  • 2 cans chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved (or diced regular tomatoes)

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • salt and pepper to taste

Instructions
 

  • In a large bowl, combine the chickpeas, cherry tomatoes, and diced red onion.
  • In a separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.
  • Pour the dressing over the chickpea mixture and toss to combine.
  • Add the chopped parsley and mint to the salad and toss again to distribute evenly.
  • Chill the salad for at least 30 minutes before serving to allow the flavors to meld together.
  • Serve the chickpea salad as a side dish or as a main course, garnished with additional herbs if desired.

Notes

Preparation Tips:
