  • 2 cups shredded red cabbage
  • 2 cups sliced or shredded cooked chicken
  • 1 cup shredded carrots
  • 1 cup  sugar snap peas, sliced
  • ½ cup chopped cilantro (optional)
  • ½ cup  toasted sliced almonds
  • ½ cup crispy chow mein noodles or fried wonton strips

For the Dressing:

  • ¼ cup soy sauce
  • 3 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 2  cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¼ cup vegetable oil

  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger. Slowly drizzle in the vegetable oil while continuing to whisk until the dressing is well emulsified. Set aside.

  • Divide the Chinese chicken salad into individual serving bowls. Garnish with extra cilantro, if preferred. Serve immediately and savor the harmonious flavors and textures.

Cooking Tips for the Best Results:

  1. Crunchy Toppings: For the perfect texture, add the toasted sliced almonds and crispy chow mein noodles or fried wonton strips just before serving to maintain their crunchiness.
  2. Freshness Matters: Use the freshest ingredients available for the best taste and texture. Crisp vegetables and tender chicken make all the difference.
  3. Balanced Dressing: Adjust the amount of dressing according to your preference. Start with a lighter drizzle and add more if needed to avoid overdressing the salad.
  4. Customize Your Salad: Feel free to customize your Chinese chicken salad by adding ingredients like mandarin orange segments, sliced cucumber, or even sliced avocado for extra flair.
  5. Make-Ahead Friendly: Prepare the dressing and salad ingredients in advance, but assemble the salad just before serving to keep it as fresh and vibrant as possible.
