  • 2 cups shredded red cabbage
  • 2 cups sliced or shredded cooked chicken
  • 1 cup shredded carrots
  • 1 cup  sugar snap peas, sliced
  • ½ cup chopped cilantro (optional)
  • ½ cup  toasted sliced almonds
  • ½ cup crispy chow mein noodles or fried wonton strips

For the Dressing:

  • ¼ cup soy sauce
  • 3 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 2  cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¼ cup vegetable oil

Instructions
 

  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger. Slowly drizzle in the vegetable oil while continuing to whisk until the dressing is well emulsified. Set aside.
  • In a large salad bowl, combine the coarsely chopped Chinese or Napa cabbage, shredded red cabbage, shredded cooked chicken, shredded carrots, sliced sugar snap peas, and chopped cilantro (if using). Toss the salad ingredients together until well mixed.
  • Sprinkle the toasted sliced almonds and crispy chow mein noodles or fried wonton strips over the salad for a delightful crunch.
  • Drizzle the prepared dressing over the salad, starting with about half of the dressing. Toss the salad gently to coat all the ingredients. Add more dressing if desired, ensuring not to overdress the salad.
