For the Shortcakes:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 3/4 cup cold heavy cream
  • 1 teaspoon vanilla extract

For the Strawberries:

  • 1 1/2 pounds fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar

For the Whipped Cream:

  • 1 cup cold heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

ℹ️ Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Prepare Shortcake Dough: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Add Cream and Vanilla: Pour in the cold heavy cream and vanilla extract. Stir until the dough just comes together. Be careful not to overmix.
  4. Shape Shortcakes: Turn the dough out onto a lightly floured surface. Gently pat the dough into a circle about 3/4 inch thick. Use a round biscuit cutter to cut out shortcakes. Place them on the prepared baking sheet, leaving some space between each one.
  5. Bake Shortcakes: Bake in the preheated oven for 12-15 minutes, or until the shortcakes are golden brown. Remove from the oven and allow them to cool slightly on a wire rack.
  6. Prepare Strawberries: In a mixing bowl, combine the sliced strawberries and granulated sugar. Toss gently to coat the strawberries in sugar. Let them sit for about 10-15 minutes to release their juices.
  7. Make Whipped Cream: In another mixing bowl, beat the cold heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  8. Assemble Shortcakes: Slice each shortcake in half horizontally. Place a spoonful of strawberries on the bottom half of each shortcake, followed by a dollop of whipped cream. Place a few more strawberry slices on top of the whipped cream. Place the other half of the shortcake on top.
  9. Serve: Serve the strawberry shortcakes immediately, garnished with additional whipped cream and strawberries if desired.
