Healthy Beef Stir-Fry
Ingredients
- 1 lb beef sirloin, cut into small cubes
- 1 large red onion, sliced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp vegetable oil
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tsp cornstarch
- sesame seeds, for garnish
- green leafy vegetables, for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the garlic and ginger and stir-fry for 30 seconds.
- Add the beef and stir-fry for 3-5 minutes, or until browned on all sides.
- Add the sliced red onions and continue to stir-fry for another 2-3 minutes, or until the onions are tender.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch.
- Add the stir-fry sauce to the skillet and stir-fry for another minute or until the sauce thickens.
- Serve the beef stir-fry over a bed of green leafy vegetables and sprinkle with sesame seeds.
Notes
- Use a high heat to cook the beef to ensure it browns quickly and stays tender.
- Don’t overcrowd the skillet or wok when cooking the beef. Cook in batches if necessary.
- Use fresh ginger and garlic for maximum flavor.
- Don’t overcook the red onions, as they can become mushy and lose their texture.
- Whisk the stir-fry sauce thoroughly to ensure the cornstarch is fully incorporated and the sauce thickens properly.
