Chicken Tikka Masala with Tomatoes
Ingredients
For the chicken:
- 1 lb boneless, skinless chicken breasts, cut into bite-size pieces
- 1 cup plain yogurt
- 2 tbsp lemon juice
- 1 tbsp ground cumin
- 1 tbsp paprika
- 1 tbsp garam masala
- 1 tsp salt
- ½ tsp black pepper
For the sauce:
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp grated fresh ginger
- 1 tbsp ground cumin
- 1 tbsp paprika
- 1 tbsp garam masala
- ½ tsp turmeric
- ¼ tsp cayenne pepper
- 1 (14.5 oz) can diced tomatoes
- 1 cup heavy cream
- salt, to taste
Instructions
- In a bowl, combine the yogurt, lemon juice, cumin, paprika, garam masala, salt, and black pepper. Add the chicken pieces to the marinade and mix well. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 1 hour.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the chicken pieces on the baking sheet and bake for 15-20 minutes or until the chicken is cooked through and slightly charred
- In a large saucepan, heat the vegetable oil over medium heat. Add the onion and sauté for 5-7 minutes or until the onion is soft and translucent. Add the garlic and ginger and sauté for another 1-2 minutes or until fragrant.
- Add the cumin, paprika, garam masala, turmeric, and cayenne pepper to the saucepan. Cook for 1-2 minutes or until the spices are fragrant.
- Add the diced tomatoes and their juices to the saucepan. Bring the mixture to a simmer and cook for 10-15 minutes or until the sauce has thickened slightly.
- Add the heavy cream to the sauce and stir well. Cook for 5-10 minutes or until the sauce has thickened to your desired consistency.
- Season the sauce with salt, to taste. Add the baked chicken pieces to the sauce and stir well. Simmer for 5-10 minutes or until the chicken is heated through.
- Serve the chicken tikka masala with basmati rice and/or naan bread.
