  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 cup fresh morel mushrooms, cleaned and sliced
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • ½ cup dry white wine
  • ¼ cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme leaves
  • salt and pepper to taste

Instructions
 

  • In a saucepan, heat the vegetable broth and keep it simmering on low heat.
  • In a large skillet, heat the olive oil and butter over medium heat. Add the chopped shallot and minced garlic, and sauté until they become translucent and fragrant.
  • Add the sliced morel mushrooms to the skillet and cook them for about 5 minutes until they become tender and golden brown. Remove a few slices of mushrooms for garnishing later.
  • Add the Arborio rice to the skillet and stir it well, coating each grain with the butter and oil mixture. Toast the rice for about 2 minutes until it becomes slightly translucent around the edges.
  • Pour in the white wine and stir continuously until it is absorbed by the rice.
  • Begin adding the simmering vegetable broth to the skillet, one ladle at a time, stirring the rice constantly until the liquid is absorbed. Continue this process, adding more broth as needed, until the rice is cooked al dente. This should take about 20-25 minutes.
  • Stir in the fresh thyme leaves and grated Parmesan cheese. Season with salt and pepper to taste. The risotto should have a creamy consistency.
  • Remove the skillet from heat and let it rest for a few minutes. This allows the risotto to settle and thicken slightly.
  • Serve the gourmet morel mushroom risotto in individual bowls, garnished with the reserved sautéed morel mushroom slices. You can also sprinkle some extra Parmesan cheese and fresh thyme leaves on top for added flavor.

Cooking Tips:
  1. Use fresh morel mushrooms for the best flavor and texture in the risotto. If fresh morels are not available, you can use rehydrated dried morels by soaking them in hot water until they become plump and tender.
