🍴 Mushrooms Are Delicious! 🍄

I must admit that cooking mushroom soup is one of the simple pleasures I often enjoy. I really like mushrooms and, therefore, I often cook them in all ways – stew, sauteed, baked, as appetizers and, of course, soup.

I use both canned and fresh mushrooms for my recipes. When I cook soup, I’m looking for fresh mushrooms in the supermarket such as Portobello, Champignon, and so on. Needless to say, in the soup, you can use wild mushrooms if you can buy them from the farmers’ market or pick them from the forest. On the other hand, for some recipes, you will need dried mushrooms.

Mushrooms are one of the most popular and flavorful ingredients to be found in the kitchen. They are usually added to soups or other dishes to enhance the flavor and add body. In addition to being delicious, mushrooms are a nutritious and versatile food, rich in nutrients, so you can use them in a lot of recipes.

➡️ There are lots of recipes featuring mushrooms all over the world. It seems that Eastern Europe has many traditional recipes, so in every country, you’ll find a couple of soups with mushrooms. I like especially the creamy Hungarian version, but recently I found one from Croatia that caught my attention.

Croatian mushroom soup is a creamy soup made with dried mushrooms. In Croatia , wild mushrooms are often used, but you can use whatever dried mushrooms you can find.

Prep Time: 10 minutes

Cook Time: 1 hour and 10 minutes

Total Time: 1 hour and 20 minutes

Servings: 2 to 3

Ingredients: 3 – 4 slices bacon, chopped small, 1 onion, finely chopped, 1 tablespoon flour, 1/2 teaspoon marjoram, 1/2 teaspoon paprika, 1 1/2 cups dried mushrooms , soaked in hot water for about 10 minutes and drained, 1 medium potato, cut into cubes, 4 cups water, 1 tablespoon minced fresh parsley, 1/2 cup sour cream (you could use heavy cream), 1 teaspoon vinegar.

Here’s how to make it: > Cook the bacon and onion in a large soup pot until soft. Add the flour and cook, stirring, until flour starts turning light brown. Add the paprika and marjoram. Cook about 30 seconds. Add the mushrooms, potato and water. Season with salt and pepper. Cover and gently simmer about 1 hour.
