➡️ What ingredients do I need for cooking spare ribs in the oven? ❓

Raw Pork Brisket

1) 3 kg/100 oz of pork brisket ribs/spare ribs
2) some salt/red pepper paste and ground black pepper to taste
3) 5-6 garlic cloves or to taste, coarsely chopped
4) 250 g/9 oz of tomatoes, coarsely chopped
5) 1 tsp of dried thyme
6) 3 tbsp of olive oil

Cooking Spare Ribs in the Oven

Step 1: cut the pork brisket up the rib bones
Step 2: grind some pepper over the spare ribs in the tray
Step 3: season with salt or salted red pepper paste
Step 4: sprinkle over some chopped garlic
Step 5: do add chopped tomatoes all over
Step 6: sprinkle dried thyme over the pork ribs
Step 7: pour olive oil all over
Step 8: pour about 0.5 l/17 fl oz of water into the tray
Step 9: do close the tray with foil and place it in the oven at 180C/360F for 1 hour
Step 10: do remove foil and place the tray back in the oven at 270C/520 F for 20 minutes or until golden

Pork spare ribs belong to my favorite pork cuts because are meaty and feature a very tender muscle type that remains juicy even after frying, grilling, or baking. As a result, cooking spare ribs make me pleasure any time, as well as the moment when I eat this succulent pork type!

Cooking spare ribs is very easy regardless of the way you do it. I like any cooking method but most often I cook pork ribs in the oven because the meat becomes very tender inside and browned outside. Plus, the fat melts almost completely, so it’s probably the healthiest way for cooking spare ribs.

Since I like very much cooking spare ribs, I have many recipes. I share on this webpage a very simple but also very tasty braised pork ribs recipe. If you don’t know what braising is, please read more information about this topic below.

However, I don’t use usually the classic way of braising, aka frying the meat first and then simmering it, but I reverse the order of these processes. First, I simmer the meat under the foil to become particularly tender and to absorb all the flavors I use, and then I fry the meat at a very high temperature to obtain the crust from the outside. If you use my technique, you will become a master of cooking spare ribs in the oven, without a doubt!

I will just point out that the use of tomatoes is very beneficial for cooking spare ribs in the oven for two reasons: it provides an extra flavor and helps to form a very tasty sauce that can be served to top the ribs or over the side dish you’re using.

Braising (from the French word braiser) is a combination-cooking method that uses both wet and dry heats: typically, the food is first sautéed or seared at a high temperature, then finished in a covered pot at a lower temperature while sitting in some (variable) amount of liquid (which may also add flavor). Braising of meat is often referred to as pot roasting, though some authors make a distinction between the two methods, based on whether additional liquid is added.

Method

Braising relies on heat, time, and moisture to break down the tough connective tissue (collagen) that binds together the muscle fibers in meat, making it an ideal way to cook tougher, more affordable cuts. Many classic braised dishes (e.g., coq au vin) are highly evolved methods of cooking tough and otherwise unpalatable foods. Both pressure cooking and slow cooking (e.g. in a crockpot) are forms of braising.

Techniques

Most braises follow the same basic steps. The food to be braised (meats, vegetables, mushrooms, etc.) is first pan-seared to brown its surface and enhance its flavor (through the Maillard reaction). If the food will not produce enough liquid of its own, a certain amount of cooking liquid that often includes an acidic element (e.g., tomatoes, beer, balsamic vinegar, wine) is added to the pot, often with stock.

A classic braise is done with a relatively whole cut of meat, and the braising liquid will cover two-thirds of the food in the pan. The dish is then covered and cooked at a very low simmer until the meat becomes so tender that it can be “cut” with just the gentlest of pressure from a fork (versus a knife). Often the cooking liquid is finished to create a sauce or gravy as well.[3][4]

Sometimes foods with high water content (particularly vegetables) can be cooked in their own juices, making the addition of liquid unnecessary.[5]

A successful braise intermingles the flavors of the foods being cooked with those of the cooking liquid. This cooking method dissolves the meat’s collagen into gelatin, which can greatly enrich and thicken the liquid. Braising is economical (as it allows the use of tough and inexpensive cuts), and efficient (as it often enables an entire meal to be prepared in a single pot or pan).
