Ingredients

For pizza dough

  • 7 fl oz water, less or more
  • 2 tbsp vegetable oil (sunflower oil or olive oil)
  • 0.35 oz fresh yeast
  • 10 oz all-purpose flour and some more for flouring (for 1 large pizza of 32 cm/12 inches )

For tomato sauce

  • 1 tbsp tomato puree
  • salt and ground black pepper to taste
  • a pinch of sugar
  • ½ tbsp sweet paprika
  • ½ tbsp sunflower oil or olive oil
  • 1.75 fl oz water, less or more

For toppings

  • 7 oz sliced smoked sausage or another sausage type of your choice (you get the best results by using a half-raw sausage type, not fresh or very dry!)
  • 3.5 oz canned sweet corn
  • 0.7 oz sliced spring onions
  • some sliced raw or pickled chili peppers for a spicy taste (optional)
  • sage, oregano, or basil leaves to taste for more flavor (optional)
  • 3.5 oz grated cheese to your taste (Cheddar, Parmesan, or another type of hard cheese to your choice such as salted goat cheese, salted cow cheese, and so on)

Instructions

  • start by preparing the pizza dough – place water in a saucepan, then put the pan on the stovetop over medium temperature and wait until is warmish
  • add sunflower oil, mix, and boil for about 1 minute more
  • add fresh yeast, combine ingredients, add 2 tbsp of flour, then take the pan from the stovetop, cover it with a kitchen towel and wait about 10 minutes to activate the yeast
  • place the flour into a bowl and pour over the previously prepared mixture, then knead the ingredients by hand until you get a smooth and sticky pizza base
  • cover the bowl with the kitchen towel and wait about 30-60 minutes (depending on the room temperature) to leaven the pizza dough
  • in the meantime, prepare tomato sauce for the pizza crust – start by placing into a small bowl tomato puree, salt, ground pepper, sugar, and paprika
  • add little oil and water, then combine well all the ingredients until you get a smooth sauce
  • brush a 32 cm/12 inches pizza tray with a little sunflower oil and sprinkle over some flour (this will prevent sticking the pizza to the tray)
  • after the pizza dough grew in volume (usually, the dough should double its volume), remove it from the bowl, place it into the tray, and spread it into a uniform layer, sprinkle occasionally some flour over the dough to prevent sticking the dough to your hand
  • place tomato sauce over the dough and brush it evenly
  • place sausage slices over the sauce into a layer, then add the sweet corn, sliced spring onion, and sliced chili pepper for a spicy taste (optional)
  • place over some aromatic plants, then spread the cheese evenly across the pizza
  • place the pizza into the preheated oven at 290 C/550 F and wait until golden on top and edges (about 10-15 minutes)
  • remove the sausage pizza from the oven, wait about 10 minutes before serving, then take it out from the tray and slice it to your desire

Notes

Cooking tips:
  • Use a cast iron skillet if you don’t have a pizza stone: For a crispy crust and even cooking, consider using a cast iron skillet to bake your pizza. Preheat the skillet in the oven before adding the dough and toppings for the best results.
  • Pre-cook the sausage if needed: To avoid having undercooked or greasy sausage on your pizza, cook the smoked kielbasa if it’s too raw before adding it to the pizza. You can slice it thinly and cook it on the stovetop or in the oven for a few minutes until it’s lightly browned.
  • Choose the right cheese: For a country-style pizza, you’ll want a cheese that melts well and has a tangy flavor. Consider using a combination of shredded mozzarella and cheddar or a crumbled feta cheese to add a bit of richness and depth of flavor to the pizza.
  • Experiment with toppings: While smoked kielbasa is a classic topping for a country-style pizza, you can also try adding other ingredients like caramelized onions, roasted garlic, sautéed mushrooms, or even diced potatoes for a unique twist on the classic recipe.
  • Let the pizza rest before cutting: To prevent the toppings from sliding off and to let the cheese set, allow the pizza to rest for a few minutes after taking it out of the oven before cutting into it. This will help the pizza hold together and make it easier to slice and serve.
