Crispy Fried Chicken Wings without Breadcrumbs

Crispy fried chicken wings are a classic dish that can be enjoyed in many different ways. Whether you like them with a spicy buffalo sauce or simply seasoned with salt and pepper, there's nothing quite like biting into a perfectly crispy wing. But did you know that you can achieve that crispy texture without using breadcrumbs?
In this recipe, the crispy texture is achieved through a combination of eggs and flour, which creates a light and airy coating that crisps up beautifully when fried. This coating also allows the flavors of any seasoning or sauce you add to the wings to really shine through, making for a flavorful and satisfying meal.
One of the benefits of this recipe is that it's a versatile recipe that can be adapted to suit any taste. You can add a variety of spices or seasonings to the coating mix to give the wings a unique flavor profile, or you can serve them up with a variety of dipping sauces to suit your mood.
When it comes to cooking these wings, there are a few key tips to keep in mind to ensure that they turn out perfectly. Firstly, make sure your oil is hot enough before adding the wings. This will help the coating crisp up quickly and prevent the wings from becoming greasy. It's also important to shake off any excess coating before frying, as this can cause the coating to clump together and become soggy.
Another tip is to use a wire rack to drain the wings after frying. This will help any excess oil drip off, resulting in a crispier wing. Finally, it's important to season the wings immediately after they come out of the oil, while they're still hot and crispy. This will ensure that the seasoning sticks to the coating and adds an extra layer of flavor to the wings.
Crispy fried chicken wings without breadcrumbs are a delicious and versatile dish that can be enjoyed by anyone, regardless of dietary restrictions. With a light and airy coating that crisps up perfectly when fried, these wings are a hit that can be customized to suit any taste. So whether you're cooking up a batch for game day or a family dinner, be sure to keep these tips in mind to ensure that your wings turn out perfectly every time.

Servings 4 servings

  • 35 oz chicken wings
  • salt and ground white pepper
  • 2-3 eggs, depending on their size
  • 3-4 tbsp all-purpose flour
  • 2 fl oz cold water, less or more depending on the flour
  • 10 fl oz sunflower oil for frying (you can use another vegetable oil type with a neutral flavor such as palm oil)

  • cut the tip of the chicken wings (recommended)
  • season chicken wings with salt and ground white pepper to taste, and rub the skin well to absorb spices inside
  • cover the bowl with foil and put it in the fridge for about 1 hour (optional)
  • break eggs and mix them with a little salt
  • add flour to eggs and mix well
  • pour a little water and mix ingredients until you get a batter with a creamy consistency, without flour lumps
  • put the wings in the previously prepared batter and coat them entirely
  • place a pan on the stove over medium heat, pour some oil inside, and wait until it’s hot
  • lay chicken wings in the frying pan and wait to fry the wings on the bottom side (2-4 minutes, depending on their size)
  • flip the wings and wait to fry evenly (2-3 minutes)
  • when the crust is golden, remove the wings from the pan, drain the oil, and put them on absorbent paper or on a wire rack to remove excess oil

Cooking Tips:
  1. Make sure the oil is hot enough: When frying chicken wings, it’s important to make sure that the oil is hot enough before adding the wings. This will help the coating crisp up quickly and prevent the wings from becoming greasy. You can test the temperature of the oil by dropping a small piece of the coating mixture into the oil – it should sizzle and immediately rise to the surface.
  2. Shake off excess coating: Before frying the wings, be sure to shake off any excess coating. This will help prevent the coating from clumping together and becoming soggy. It’s also a good idea to let the coated wings sit for a few minutes before frying to allow the coating to adhere to the chicken better.
  3. Use a wire rack to drain the wings: Once the wings are done frying, use a wire rack to drain them. This will help any excess oil drip off, resulting in a crispier wing. Place the wire rack over a baking sheet to catch any oil that drips off.
  4. Season immediately after frying: As soon as the wings come out of the oil, you can season them additionally with your desired spices or seasonings. The hot wings will absorb the flavor more effectively, resulting in a more flavorful wing.
  5. Serve immediately: Crispy fried chicken wings are best served hot and fresh out of the fryer. If you’re making a large batch, keep them warm in the oven at a low temperature until you’re ready to serve. Avoid covering them with foil, as this can cause them to become soggy.

➡️ When making Parisian schnitzel, many people complain that the crust is not crispy but soft and sticky. Attention! Don’t cover the dish where you store the schnitzel after you take it out from the pan because the crust will soften due to the steam!

➡️ Another important cooking tip is to fry any chicken schnitzel over medium heat to allow frying even the thicker parts of the meat.
