Ingredients
  

  • 2 large cucumbers, peeled and chopped
  • 2 ripe avocados, diced

  • ¼ cup fresh parsley, chopped

  • ¼ cup cup extra-virgin olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard

Instructions
 

  • In a large mixing bowl, combine the chopped cucumbers, diced avocados, chopped red onion, and chopped parsley. Season with salt and pepper to taste.
  • In a small mixing bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, and salt and pepper to taste.
  • Pour the dressing over the salad and toss gently to coat.
