How to Make a Cucumber Avocado Salad from Scratch
Cucumber Avocado Salad with a Gourmet Dressing
- 2 large cucumbers, peeled and chopped
- 2 ripe avocados, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh parsley, chopped
- salt and pepper to taste
- ¼ cup cup extra-virgin olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- 1 tbsp Dijon mustard
- In a large mixing bowl, combine the chopped cucumbers, diced avocados, chopped red onion, and chopped parsley. Season with salt and pepper to taste.
- In a small mixing bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, and salt and pepper to taste.
- Pour the dressing over the salad and toss gently to coat.
- Serve the salad immediately, garnished with additional parsley if desired.
- Be sure to use ripe avocados for the best flavor and texture. They should be slightly soft to the touch but not mushy.
- If you’re making the salad ahead of time, wait to add the dressing until just before serving to prevent the vegetables from becoming soggy.
- For a spicier dressing, add a pinch of cayenne pepper or a dash of hot sauce.
