Dried Cannellini Beans Stew

➡️ Dried cannellini beans are my favorite white beans, no matter what recipe I cook with dried beans. That doesn’t mean I don’t cook other types of dried beans, such as red kidney beans, but cannellini is my favorite!

➡️ This is because cannellini beans are one of the largest varieties of dried white beans, are very tasty, and easy to cook, and a lot of recipes can be prepared with them. In addition, they are very healthy and an excellent protein alternative when you don’t want to eat meat, so it’s an excellent option for vegans.

Ingredients 2 tablespoons olive oil or avocado oil, 5 cloves garlic, peeled and thinly sliced, 2 cans (15 ounces each) cannellini beans, drained and rinsed, 1 jar (16 ounces) artichoke hearts, drained and chopped, 6 cups roughly chopped fresh spinach, 1 tablespoon freshly squeezed lemon juice, 1/2 cup grated Parmesan or pecorino romano, crushed red pepper flakes, to taste (optional)
