What ingredients do you need for the broccoli soup with dumplings?

Raw Broccoli Bunches

1) 500 g/17 oz of broccoli bunches (fresh or frozen)
2) 600 g/21 oz of carrots
3) 200 g/7 oz of parsley or parsnip roots
4) 200 g/7 oz of celery root
5) some salt or salted red pepper paste
6) 50 ml/1.7 fl oz (2-3 tbsp) of sunflower oil
7) 100 g/3.5 oz of tomatoes
8) 1 egg
9) 3-4 tbsp of all-purpose flour
10) a bundle of fresh parsley leaves
11) 1-2 tbsp of sour cream/serving (optional)

How to make a broccoli dumpling soup from scratch?

Homemade Vegetable Broccoli Soup with Dumplings

1) peel carrots, parsnip root, and celery root then cut them into small pieces and put them into a tall pot
2) season vegetables with some salt or salted red pepper paste to taste
3) pour vegetable oil and about a glass of water into the pot
4) place the pot on the stove and simmer vegetables over a very high temperature for about 5 minutes or until the vegetables soften a bit
5) chop tomatoes and add them to the pot along with the broccoli bunches
6) reduce temperature, fill the pot up with water, and boil the soup until the broccoli is soft (about 25-30 minutes)
7) meanwhile, break an egg into a bowl, add the flour and a bit of cold water (50 ml/1.7 fl or depending on the flour you’re using), and mix them energetically until you get a smooth dough with a creamy consistency
8) break small quantities of dough with a spoon and place them into the hot boiling soup broth, then wait until the dumplings rise to the surface
9) in the meantime, chop some fresh parsley leaves to taste, place them into the soup, and boil ingredients 2-3 minutes more
