Ingredients
  

  • 4 skinless boneless chicken breast halves
  • salt and ground white pepper
  • 8 Prague ham or another type of thin ham slices
  • 4 Parmesan or Gouda cheese, thin slices
  • 2-3 tbsp all-purpose flour
  • 2-3 eggs
  • 2-3 tbsp breadcrumbs
  • 10 fl oz vegetable oil for frying

Instructions
 

  • remove skin and bone if needed, then cut the chicken breast into two halves; repeat with the second chicken breast
  • use a very sharp knife with a thin blade and cut a pocket into each half lengthwise, just like in the video
  • season chicken breast with salt and white pepper to taste
  • take a ham slice, place over a cheese slice, then add another ham slice and roll them together as tightly as possible
  • put the roll into the pocket you made previously in the chicken breast half and seal the edges with toothpicks in 2-3 places
  • continue in the same way with the rest of chicken, ham, and cheese
  • break eggs into a bowl, then beat them up with a fork
  • coat each cordon bleu with flour, beaten eggs, and breadcrumbs, exactly in this order
  • place oil in a pan, then put the pan on the stovetop over a medium-high temperature and wait until the oil is hot
  • place chicken cordon bleu into oil and wait to brown the bottom side
  • flip the cordon bleu and wait until both sides are evenly browned
  • remove the cordon bleu from the pan and drain well the oil, then place it on absorbent paper or wire rack to remove any excess oil
  • remove the toothpicks with care to not break the fried breadcrumb coating
  • serve this easy chicken cordon bleu immediately
