Sri Lankan Chicken Curry
Ingredients
- 1 lb chicken, cut into pieces
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit lengthwise (adjust to your spice preference)
- 1 tbsp Sri Lankan red curry paste
- 1 tsp turmeric powder
- 1 tsp chili powder (adjust to your spice preference)
- 1 tsp paprika
- 1 can (13.5 fl oz) coconut milk
- 1 cup water
- 2 tbsp tomato paste
- 2 tbsp tamarind pulp
- salt, to taste
- fresh cilantro leaves, for garnish (optional)
Instructions
- In a large pan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they turn translucent.
- Add the minced garlic, grated ginger, and slit green chilies to the pan. Sauté for a couple of minutes until fragrant.
- Add the Sri Lankan red curry paste, turmeric powder, chili powder, and paprika to the pan. Stir well to coat the onions and spices evenly.
- Add the chicken pieces to the pan and cook until they are browned on all sides.
- Pour in the coconut milk and water, and stir in the tomato paste and tamarind pulp. Season with salt to taste.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the pan and let it cook for about 30 minutes, or until the chicken is cooked through and tender.
- Once the chicken is cooked, remove the lid and let the curry simmer for an additional 5 minutes to thicken the sauce.
- Garnish with fresh cilantro leaves before serving.
- Serve the Sri Lankan Chicken Curry hot with steamed rice or naan bread.
