  • 1 lb chicken, cut into pieces
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise (adjust to your spice preference)
  • 1 tbsp Sri Lankan red curry paste
  • 1 tsp turmeric powder
  • 1 tsp chili powder (adjust to your spice preference)
  • 1 tsp paprika
  • 1 can (13.5 fl oz) coconut milk
  • 1 cup water
  • 2 tbsp tomato paste
  • 2 tbsp tamarind pulp
  • salt, to taste
  • fresh cilantro leaves, for garnish (optional)

Instructions
 

  • In a large pan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they turn translucent.
  • Add the minced garlic, grated ginger, and slit green chilies to the pan. Sauté for a couple of minutes until fragrant.
  • Add the Sri Lankan red curry paste, turmeric powder, chili powder, and paprika to the pan. Stir well to coat the onions and spices evenly.
  • Add the chicken pieces to the pan and cook until they are browned on all sides.
  • Pour in the coconut milk and water, and stir in the tomato paste and tamarind pulp. Season with salt to taste.
  • Bring the mixture to a simmer, then reduce the heat to low. Cover the pan and let it cook for about 30 minutes, or until the chicken is cooked through and tender.
  • Once the chicken is cooked, remove the lid and let the curry simmer for an additional 5 minutes to thicken the sauce.
  • Garnish with fresh cilantro leaves before serving.
