  • 600/21 g/oz skinless boneless chicken breast (you can also use leftover grilled, baked or roasted chicken breast)
  • 40/1.5 g/oz green onions
  • 120/4.5 g/oz pickles
  • 3 eggs
  • 1 tbsp mustard – you can use classic, sweet, or spicy mustard, of your choice (optional)
  • 2 tbsp sunflower oil for frying
  • 400/14 ml/fl oz sunflower oil for the mayonnaise
  • 3 tbsp yogurt (10% fat) or sour cream (12% fat)
  • 250/9 g/oz canned mushrooms
  • salt and ground white pepper to taste
  • some greenery to taste (parsley, coriander, dill, basil)


  • cube chicken breast into small pieces
  • pour 2 spoons of oil into a frying skillet and place it on the stovetop over medium temperature (skip frying if using leftover chicken)
  • wait until the oil is hot
  • place cubed chicken breast into the skillet and fry it until very slightly golden, meanwhile season it with some salt to taste
  • take the skillet off the stove and wait for the chicken breast to cool to room temperature
  • meanwhile, boil 1 egg until the yolk is hard, then wait to cool to room temperature
  • peel the boiled egg off and separate the yolk and white
  • place the boiled egg yolk into a bowl
  • break the remaining eggs and separate the yolks and whites
  • place raw egg yolks into the same bowl with the boiled yolk
  • crush boiled yolk with a fork into very small pieces
  • add mustard for more flavor (optional) and mix ingredients by hand to combine them very well
  • combine ingredients by mixer while pouring oil in small amounts into the bowl
  • the basic mayonnaise is ready when you added the entire oil amount and has a fine consistency
  • add yogurt or sour cream, season food with salt and ground white pepper to taste, then mix ingredients slowly by hand until the mayonnaise sauce is smooth
  • add fried chicken breast to the mayonnaise sauce
  • chop green onions and pickles, then place them over chicken breast
  • open the mushroom can, rinse the mushrooms, drain the water well, then add them to the bowl
  • mix ingredients slowly by hand to combine well
