How to Make Scallion Pancakes or Chinese Pancakes

Excellent, scallion pancakes, also known as Chinese pancakes, are a great choice when you craving something delicious but also very easy to make. Plus, they don’t require many ingredients and are very versatile – you can use them as hot appetizers, cold appetizers, a snack, or even a main dish for lunch or dinner! Not to mention that they would make a splash as party food!

What ingredients do you need to make scallion pancakes? (recipe for 8 servings)

Raw Scallions

1) 300 g/10 oz of all-purpose flour + more for the working surface
2) 150 g/5 oz of green onions (scallions), finely chopped
3) 1/2 tsp of salt or to taste
4) 4 tbsp of vegetable oil for the pancakes and about 8 tbsp for frying

Below are listed the steps required to cook the green onion pancakes recipe.

Total Time: 1 hour

1) Start making the dough

Whisk the flour and half of the salt in a large bowl. Mix in about 1 cup (100 ml/3.5 fl oz) of boiling water with a wooden spoon until a smooth dough forms.

2) Complete the dough

Turn out dough on a lightly floured surface and knead, adding flour as needed to prevent sticking, until dough is smooth (this takes about 5 minutes.) Then, cover the dough and let rest at room temperature for about 20 minutes.

3) Combine the dough and green onions

Divide the dough into 8 pieces, then, working one at a time, spread out on a lightly floured work surface, as thin as possible until the dough sheet is 10 inches/25 cm in diameter. Grease the dough evenly with a little oil (about 1/2 tbsp) and sprinkle the eighth part of the chopped green onion, then season with a little salt to taste. Roll the dough into a thin cylinder, then, starting with one of the ends, roll to create a new larger shape. Cover and continue with the rest of the ingredients to get 8 pieces of dough with green onions. Let them rest at room temperature for about 10 minutes.

4) Make scallion pancakes

Working with 1 dough piece at a time, roll it out on a lightly floured surface to a 5 inches/12.5 cm round sheet (keep other pieces covered). Repeat with the remaining dough pieces and stack the pancakes as you work, separating them with lightly vegetable oil-greased food foil.

5) Fry the Chinese pancakes

Place about 1 tbsp of vegetable for each pancake in a frying pan, wait to heat up over a low-medium temperature, then add the pancake and fry it until golden on the bottom side (3-4 minutes), flip it and fry until evenly golden (2-3 minutes). Continue with the remaining pancakes in the same way.

  • allow enough time to rest the dough in order to leaven well
  • spread the green onion evenly over the entire surface of the pancake
  • don’t grease the pancake with too much oil
