Servings 4 servings

  • 12/350 oz/g all-purpose flour
  • 0.5/15 oz/g baking powder
  • a pinch of salt according to your taste
  • 1 tbsp sugar
  • 10/300 fl oz/ml milk
  • 1-2 eggs, depending on their size
  • 1.5/50 oz/g butter
  • ½ tsp cinnamon powder
  • 2-3 tbsp vegetable oil with a neutral flavor for frying

  • Sift the flour and baking powder into a bowl, then add the salt and sugar over.
  • Heat the milk just to become lukewarm and melt the butter, then make a well in the center of the flour and pour in the milk and melted butter, add the egg, and cinnamon powder, and combine all ingredients until you get a smooth batter.
  • Heat a lightly oiled frying pan over medium-high temperature, pour or scoop about one-eighth of the batter, wait to brown on the bottom side (about 1 minute), flip the pancake and brown it evenly (about 30 seconds). Do the same with the rest of the batter, and oil the pan every time before frying.

Preparation Tips:
  1. Use a whisk or fork to gently mix the pancake batter: Overmixing can result in dense pancakes, so it’s important to combine the ingredients until they are just incorporated. A few lumps in the batter are perfectly fine and will contribute to the fluffiness of the pancakes.
  2. Let the batter rest: Allow the batter to rest for about 10 minutes before cooking. This allows the gluten in the flour to relax, resulting in lighter and more tender pancakes.
  3. Preheat the griddle or skillet: Make sure your cooking surface is properly heated before adding the pancake batter. This helps in achieving a golden brown color and ensures even cooking.
  4. Use a ladle or measuring cup for consistent portion sizes: To ensure that your pancakes are similar in size and cook evenly, use a ladle or measuring cup to pour the batter onto the griddle. This will help you achieve a uniform stack of fluffy pancakes.
  5. Flip the pancakes at the right time: Wait until you see bubbles forming on the surface of the pancakes before flipping them. This indicates that the bottom side is cooked and ready to be flipped. Be gentle when flipping to avoid deflating the pancakes and allow the other side to cook until golden brown.

Final Notes for the Fluffy Pancake Recipe

  • don’t use cold milk because it will inactivate the baking powder and the pancakes won’t be fluffy. Use room temperature ingredients: cold ingredients can lead to dense, heavy pancakes, while hot ingredients can cause the pancakes to spread too thin. To avoid these issues, be sure to use room-temperature milk and eggs, and allow the melted butter to cool slightly before adding it to the wet ingredients.
  • if you have time, wait about 15 minutes after you make the batter because the pancakes will rise, even more, this holds for any fluffy pancake recipe
  • don’t overmix the batter: while it’s important to make sure all of the ingredients are well combined, mixing the batter too much can result in tough, dense pancakes. To avoid overmixing, simply stir the wet ingredients into the dry ingredients until the flour is just moistened, and then stop stirring. You may still see a few small lumps in the batter, and that’s okay.
  • if you don’t like cinnamon, you can completely remove it or replace it in your fluffy pancake recipe with other delicious flavors such as nutmeg or cardamom
  • do not fry the pancakes at too high a temperature as you risk burning them, it is best to set the stove to a medium-high temperature. Cook the pancakes over medium heat: If you cook the pancakes over too high of heat, the exterior will burn before the interior has had a chance to cook through. On the other hand, if you cook the pancakes over too low of heat, the bottoms will be undercooked and the tops may not have had a chance to fully set. By cooking the pancakes over medium heat, you’ll be able to achieve the perfect balance of fluffy interior and crispy exterior.
  • turn the pancake when it is slightly golden at the bottom, if it is dark brown it means that it is already burnt and could have a bitter taste. However, don’t flip the pancakes too soon: when the small bubbles on the surface of the pancakes begin to pop and the edges start to look set, it’s time to flip the pancakes. If you flip the pancakes too soon, the bottoms will be undercooked and the tops may not have had a chance to fully set.
  • serve the pancakes immediately as they’re ready to enjoy the fluffiest texture
