  • 0.5/15 oz/g baking powder
  • a pinch of salt according to your taste
  • 1 tbsp sugar
  • 10/300 fl oz/ml milk
  • 1-2 eggs, depending on their size
  • 1.5/50 oz/g butter
  • ½ tsp cinnamon powder
  • 2-3 tbsp vegetable oil with a neutral flavor for frying

Instructions
 

  • Sift the flour and baking powder into a bowl, then add the salt and sugar over.
  • Heat the milk just to become lukewarm and melt the butter, then make a well in the center of the flour and pour in the milk and melted butter, add the egg, and cinnamon powder, and combine all ingredients until you get a smooth batter.
  • Heat a lightly oiled frying pan over medium-high temperature, pour or scoop about one-eighth of the batter, wait to brown on the bottom side (about 1 minute), flip the pancake and brown it evenly (about 30 seconds). Do the same with the rest of the batter, and oil the pan every time before frying.

  • if you have time, wait about 15 minutes after you make the batter because the pancakes will rise, even more, this holds for any fluffy pancake recipe
