How to Make Fresh Cherry Pie from Scratch

What ingredients do you need for the fresh cherry pie?

Fresh Cherries

1) 800 g/28 oz of pastry dough (view how to make dough)
2) 700 g/25 oz of fresh cherries, seedless
3) 150 g/5.5 oz of granulated sugar
4) 100 g/3.5 oz of semolina
5) 1/2 tsp of cinnamon powder
6) 1 egg for brushing
7) some powdered sugar for garnishing (optional)

How to make fresh cherry pie from scratch?

Fresh Cherry Pie

step 1: split the dough into two parts with a proportion of 1:3
step 2: spread the larger dough piece into a sheet of the tray size
step 3: place the dough sheet into the tray and remove the excess dough
step 4: add sugar over the cherries
step 5: toss in the semolina and cinnamon
step 6: mix ingredients well and place them into the tray
step 7: spread the second dough piece into a sheet
step 8: place the sheet on top, merge the sheets, and remove excess dough
step 9: brush the pie top with a beaten egg
step 10: poke several times the sheet with a knife, then bake the pie in the preheated oven at 200C/390F until golden
step 11: take the fresh cherry pie out of the oven and wait to cool
step 12: sprinkle over some powdered sugar (optional)

5 PRO Tips for the Fresh Cherry Pie Recipe

  • I recommend using black cherries if you have them at your disposal because they are very sweet, but you still can replace them with other cherry types including sour cherries (you need to add more sugar in this case!)
  • prepare traditional shortcrust pastry dough with lard or butter for the best results (see my recipe above)
  • you can replace cinnamon with cloves or cardamom if you don’t like it
  • I recommend using brown sugar for a slight caramel taste that combines very well with the black cherries flavor
  • avoid slicing up or sprinkling powdered sugar over the cherry pie until it isn’t completely cold – this will completely ruin the pie!
