  • 50/1.5 (oz/kg) fresh pork ham steaks with the fat and skin on
  • some garlic to taste (I use at least 5-6 garlic cloves)
  • ½ tsp salt or salt red pepper paste
  • ¼ tsp ground black pepper or to taste
  • 2-4 tbsp vegetable oil for the marinade and roasting
  • ½ tsp cumin powder (you can use instead allspice, coriander, paprika, curry, or hot chili)
  • ½ tsp dried thyme
  • 7/200 (fl oz/ml) water, stock, or wine

Instructions
 

  • place the fresh pork ham steaks on a tray.
  • make the marinade – chop or crush the garlic, add salt, 1-2 tbsp of oil, ground pepper, cumin, and thyme, then combine well the ingredients.
  • add the marinade over the ham, then rub well the meat on both sides.
  • cover the ham with foil and put it into the fridge for a couple of hours or even overnight (recommended for better flavoring.)
  • pour some water, stock, or wine into the tray and a little oil over the meat if it's too dry (optional.)
  • put the tray into the oven and roast the fresh ham at about 180 C/360 F until it's golden brown (about 90 minutes, depending on the steaks thickness), flip the steaks 1-2 times to roast evenly.
  • turn the oven off and let the fresh ham roast to rest for about 15-30 minutes before serving (recommended.)
