1) remove the outer leaves, then cut the cauliflower into small pieces and put them in a pot
2) season the cauliflower with a little salt to taste, then cut the peeled garlic into small pieces
3) pour the milk into the pot, then put it on the stove at medium-low temperature and boil the ingredients until the cauliflower is very soft (about 25 minutes)
4) put in the pot white pepper to taste and finely chopped dill
5) add butter at room temperature and mix the ingredients manually or with a food processor until you get a puree with a fine and homogeneous texture
Cauliflower puree is, in my opinion, very underestimated in world cuisine. It is not clear to me why mashed cauliflower is not made more often and on a larger scale. Despite the fact that this dish is made very quickly and is extremely delicious, it is not very cooked either at home or in restaurants.
The most convenient explanation is that people do not like cauliflower because they have not had the opportunity to taste delicious recipes that contain this vegetable.
I like cauliflower very much and therefore I cook it in many ways. Cauliflower soup, cauliflower au gratin (cauliflower bake), breaded cauliflower, and, of course, cauliflower puree are a must on my family’s table.
Regarding cauliflower puree, it can be cooked only from cauliflower or in combination with potatoes.
