German Fried Chicken Legs

German fried chicken legs, also known as "gebratene Hühnerkeulen" in German, is a popular dish in Germany and other parts of Europe. This dish is essentially chicken legs that have been coated with breadcrumbs and fried until golden brown. The end result is a crispy, juicy chicken leg that is perfect for any meal.
The chicken legs used for this recipe can be bone-in or boneless, depending on your preference. Boneless chicken legs are easier to cook, while bone-in legs have more flavor. The legs are typically coated in a mixture of flour, eggs, and breadcrumbs before being fried in oil. This coating creates a crunchy exterior that contrasts perfectly with the tender meat inside.
German fried chicken legs can be served as a main dish or as part of a larger meal. They are often accompanied by side dishes such as potatoes, green beans, or coleslaw. In Germany, this dish is often served with a creamy mushroom sauce, adding even more flavor to the already delicious chicken.
There are several variations of this recipe that you can try. For example, you can add different seasonings to the breadcrumb coating to create a unique flavor profile. You can also experiment with different types of breadcrumbs, such as panko breadcrumbs or seasoned breadcrumbs, to add more texture and flavor.
German fried chicken legs are a delicious and easy-to-make dish that is sure to impress your family and friends. Whether you are cooking for a special occasion or just looking for a satisfying weeknight meal, this recipe is sure to satisfy your cravings for crispy, flavorful chicken.

  • 50 oz chicken legs, chicken thighs, or chicken drumsticks
  • salt and ground white pepper (optional)
  • 3-4 eggs
  • 3-4 tbsp all-purpose flour
  • 3-4 tbsp breadcrumbs
  • 10 fl oz sunflower oil for frying

  • if you are using whole chicken legs, remove excess skin and back if necessary, then cut the leg on the joint into thigh and drumstick (view how to cut chicken leg into pieces)
  • rub the chicken with salt and pepper to enter inside the meat evenly, then cover the bowl with foil and place it in the fridge for about 1 hour (optional)
  • coat each chicken piece with flour, beaten egg, and breadcrumbs (exactly in this order) so that it finally has a smooth crust
  • pour oil into a frying pan, place it over medium heat and wait until the oil is hot
  • lay chicken pieces in the pan
  • fry the meat until the crust on the bottom side turns golden (2-4 minutes)
  • flip chicken schnitzels and wait until they turn completely golden (2-3 minutes), you need to fry larger drumsticks 1-2 minutes more with the joint placed vertically into the oil
  • take chicken leg schnitzel with breadcrumbs out from the pan and place it on absorbent paper to remove excess oil

Cooking Tips:
  1. Start with room temperature chicken: Take the chicken legs out of the refrigerator about 30 minutes before cooking. This will help them cook evenly and prevent them from being too cold in the center when they are done.
  2. Use a cast iron skillet: A cast iron skillet is perfect for frying chicken legs because it heats evenly and retains heat well. This will help you achieve a crispy, golden crust on the chicken legs.
  3. Don’t overcrowd the pan: When frying the chicken legs, make sure to leave enough space between them so that they cook evenly and the crust becomes crispy. Overcrowding the pan will cause the chicken to steam instead of fry, resulting in a soggy crust.
  4. Use a thermometer: To ensure that the chicken legs are fully cooked, use a meat thermometer to check the internal temperature. The chicken legs should reach an internal temperature of 165°F (74°C).
  5. Let the chicken rest: Once the chicken legs are cooked, remove them from the pan and let them rest on a wire rack for a few minutes. This allows the juices to redistribute, which makes the chicken more tender and juicy.

➡️ Schnitzel is one of the most popular chicken recipes in many European countries. Chicken schnitzel can be prepared with breadcrumbs (Wiener schnitzel) or without breadcrumbs (Parisian schnitzel – view how to make chicken leg schnitzel without breadcrumbs).

➡️ This German chicken schnitzel recipe to cook fried chicken legs is extremely tasty, the meat is tender, while the outside crust is crispy. To get the best results, I recommend avoiding placing the schnitzel into a covered dish. If you do so, the schnitzel won’t be crunchy anymore because the crumb is softened by steam.

➡️ This fried chicken legs recipe with breadcrumbs can be served with various side dishes such as mashed potatoes, French fries, buttered potatoes, plain rice pilaf, and many more. Fresh vegetable salads and dipping sauces are also very suitable to be combined with chicken schnitzel.

➡️ The best drink to serve along with German-style fried chicken legs is white wine, but it can be accompanied by a cold beer as well. Needless to say, soft drinks and plain water are good choices as well.

➡️ I love making German fried chicken legs at home! This dish is so flavorful and crispy, and it’s a great way to enjoy chicken drumsticks. To make it, you need just to coat the chicken with a mixture of flour, eggs, and breadcrumbs, then fry them in a pan until they’re golden brown. That’s all you have to do to enjoy an extremely tasty and quick dinner!

➡️ Chicken legs are very tasty when fried and you’ve probably tasted various recipes with this type of chicken, but I don’t think any of them can compare with the German schnitzel, which is simply irresistible!
