2 boneless, skinless chicken breast halves
Salt and pepper to taste
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon dried thyme
Juice of 1 lemon
4 large lettuce leaves (such as romaine or butter lettuce)
Optional garnishes: sliced tomatoes, avocado, cucumber, or your favorite salad toppings

Preheat your grill to medium-high heat.
Season the chicken breast halves with salt and pepper on both sides.
In a small bowl, whisk together the olive oil, minced garlic, dried thyme, and lemon juice to make the marinade.
Place the chicken breast halves in a shallow dish or resealable plastic bag, and pour the marinade over them. Make sure the chicken is evenly coated. Allow the chicken to marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
