➡️ Baking tips for the apricot or peach cake recipe 🔎

The peach or apricot cake recipe is one of the most popular fruit cake recipes. Essentially, it is a sponge cake with fresh or canned fruits, so it can be prepared all year long.

Summertime, in the season of ripe apricots and peaches, I recommend using fresh fruits because they are much juicier and aromatic than canned or frozen fruits.

However, fresh fruits must be scalded and peeled beforehand making the cake, otherwise, the same procedure is required.

As I mentioned above, this sponge fruit cake is very fluffy and light, especially if you keep the dough in the fridge for a longer time.

Apricot or peach cake can be served simply or alongside tea, coffee, or milk for added flavor.

Besides peach or apricot, this recipe can be prepared with other fruits as well, both fresh and canned. As an example, you could use canned pineapple to make a quick and easy pineapple cake. Or, you could use canned pear to make pear cake.

Among the fresh fruits that can be used for this recipe, I would mention firstly plums. This fruit is very juicy and the resulted plum cake has a fantastic taste. You just need to remove seeds and peel from plums, then continue the cake in the same way as mentioned above.

Another fresh fruit that could be used successfully for this homemade cake recipe is mango. Flavorful and juice-rich, mango is just perfect to replace apricot or peach when you don’t have them at hand.

Did You Know? Health Benefits

Sponge cake is a light cake made with egg whites, flour and sugar,[1] sometimes leavened with baking powder.[2] Sponge cakes, leavened with beaten eggs, originated during the Renaissance, possibly in Spain.[3]

The sponge cake is thought to be one of the first of the non-yeasted cakes, and the earliest attested sponge cake recipe in English is found in a book by the English poet Gervase Markham, The English Huswife, Containing the Inward and Outward Virtues Which Ought to Be in a Complete Woman (1615).[4] Still, the cake was much more like a cookie: thin and crispy. Sponge cakes became the cake recognized today when bakers started using beaten eggs as a rising agent in the mid-18th century.

The Victorian creation of baking powder by English food manufacturer Alfred Bird in 1843 allowed the addition of butter to the traditional sponge recipe, resulting in the creation of the Victoria sponge.

Did You Know? Health Benefits

Peaches are related to plums, apricots, cherries, and almonds. They’re considered drupes or stone fruit because their flesh surrounds a shell that houses an edible seed.

They can be eaten on their own or added to a variety of dishes. What’s more, peaches are nutritious and may offer an array of health benefits, including improved digestion, smoother skin, and allergy relief.

1. Packed With Nutrients and Antioxidants

Peaches are rich in many vitamins, minerals, and beneficial plant compounds.

Peaches also offer smaller amounts of magnesium, phosphorus, iron, and some B vitamins.

In addition, they’re packed with antioxidants — beneficial plant compounds that combat oxidative damage and help protect your body against aging and disease. The fresher and riper the fruit, the more antioxidants it contains.

Peaches are high in fiber, vitamins, and minerals. They also contain beneficial plant compounds like antioxidants, which can help protect your body from aging and disease.

2. May Aid Digestion

Peaches may contribute to healthy digestion. One medium-sized fruit provides about 2 grams of fiber — half of which is soluble fiber, while the other half is insoluble.

Insoluble fiber adds bulk to your stool and helps move food through your gut, reducing the likelihood of constipation.

Peaches contain fiber, which contributes to smooth digestion and a lower risk of gut disorders. Peach flowers also provide certain compounds that appear to support a healthy gut.

3. May Improve Heart Health

Regularly eating fruit — including peaches — may promote heart health.

Peaches may lower risk factors for heart disease, such as high blood pressure and cholesterol levels.

What’s more, test-tube studies show that peaches may bind to bile acids — compounds produced by your liver from cholesterol.

Peaches contain compounds that may help reduce risk factors for heart disease, such as high blood pressure, as well as triglyceride and cholesterol levels. However, more studies on humans are needed.
