Ingredients
  

  • 1 tbsp olive oil
  • 1 piece medium onion, diced
  • 2 cloves garlic, minced
  • 2 piece carrots, peeled and diced
  • 2 piece stalks celery, diced
  • 1 pound boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried parsley
  • 1 piece bay leaf
  • 8 ounce egg noodles
  • 2 tbsp chopped fresh parsley (for garnish)
  • some salt
  • some ground black pepper

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery and cook for 5-6 minutes, or until the vegetables are tender.
  • Add the chicken breasts to the pot and pour in the chicken broth. Bring the mixture to a boil.
  • Reduce the heat to low and add the thyme, rosemary, parsley, bay leaf, salt, and pepper. Simmer the soup for 15-20 minutes, or until the chicken is cooked through.
  • Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  • Bring the soup back to a boil and add the egg noodles. Cook the noodles according to the package instructions, or until they are tender.
  • Remove the bay leaf from the soup. Garnish the soup with fresh parsley and serve hot.
