Apricot Jam Marmalade

1) 450 ml/15 fl oz of cow milk, lukewarm
2) 1 tbsp + 100 g/3.5 oz of granulated sugar
3) 15 g/0.5 oz of dried yeast
4) 1 tbsp + 750 g/26.5 oz of cake flour + some more for the workboard
5) 3 egg yolks + 1 whole egg
6) 1 tsp of vanilla essence
7) a pinch of salt
8) 5 tbsp of sunflower oil
9) 100 g/3.5 oz of butter at room temperature
10) 250 g/9 oz of apricot jam marmalade
11) some powdered sugar for garnishing (optional)

Homemade Leavened Dough

Step 1: warm the milk up slightly, then add 1 tbsp of sugar, yeast, and 1 tbsp of flour and mix ingredients well
Step 2: cover the milk bowl and wait 15 min to activate the yeast
Step 3: do add over egg yolks 100 g/3.5 oz of granulated sugar and mix them
Step 4: do add vanilla essence and mix
Step 5: add a pinch of salt over the flour, then mix ingredients
Step 6: pour the egg yolks over the flour
Step 7: pour oil and the yeast milk into the flour bowl
Step 8: do add half of the butter and knead the ingredients well
Step 9: do add the rest of the butter and combine ingredients until you get a smooth dough
Step 10: cover the bowl with foil, place it into a warm place (25-30C/77-86F) and wait to leaven the dough for about 45 min

Delightful Homemade Jam Buns

Step 1: do remove foil and place the dough on a floured surface
Step 2: sprinkle over the dough some flour
Step 3: spread the dough into a thin sheet
Step 4: cut large dough squares (16 pieces)
Step 5: place 1 tbsp of jam over each dough piece
Step 6: merge the opposite dough corners, the turn the jam cake over
Step 7: place the cakes on a baking paper-lined tray with a bit place between them
Step 8: cover the tray and wait to leaven the dough for 15 min
Step 9: brush the homemade cake with beaten egg
Step 10: do bake the cake in the preheated oven at 200C/390F for 30 min or until golden
Step 11: do remove the cake from the oven and wait to cool
Step 12: do sprinkle some powdered sugar on top

Jam buns belong to my favorite cake recipes even if they are considered today old-fashioned cakes.

As a child, homemade jam buns were baked by my grandmother in the winter, when fresh fruit was no longer available. However, she had a pantry full of jars of fruit jam that she made during the summer.


As a child, I sat and watched how the homemade jam buns were baked in the oven and I couldn’t wait to get them out of the oven. I’m not telling you how impatient I was for them to cool down a bit so I could taste them!

This homemade jam buns recipe is Hungarian but, as far as I know, similar recipes are available in all countries in Central and Eastern Europe and the Balkans. Preparing the homemade jam buns recipe is easy, even if the dough needs some time to rise. However, this applies to any leavened cake.

I like to make the dough by hand and you have detailed instructions above on how to get the best results. Whoever wants, can make dough with the food processor.

The homemade jam buns are traditionally made with apricot jam because it is the favorite fruit of Hungarians when it comes to jam. However, the jam cake can be made with any other type of jam, but I recommend using a drier jam such as marmalade with a high fruit content.
