  • 14 oz 4 bone-in pork chops (recommended to get juicy steaks, however, you can use boneless pork chops as well)
  • salt and ground black pepper to taste
  • 1 tsp dried thyme or another spice (optional)
  • some olive oil (about 2 tbsp)
  • some butter at room temperature (about 50 g/17.5 oz)

Instructions
 

  • season the meat as desired, then rub to get the flavors inside the meat (you can also marinate the chops in advance).
  • flip the meat slices and do the same thing.
  • heat up a grill pan and pour some olive oil.
  • rub the meat with some butter on one side.
  • place the meat slices with the buttered face down into the pan.
  • fry the pork chops at a very high temperature for about 3-4 minutes (depending on how well fried you like your steak and the meat thickness), use a lid to avoid oil sprinkling.
  • slightly butter/oil the upper sides, then flip the pork chops and fry them for another 3-4 minutes.
  • remove the fried pork chops from the pan and rest them for a few minutes before serving.
