Ingredients
- 35/1 (oz/kg) fresh mushrooms (Portobello, Champignon, or a similar type)
- 14/400 (oz/g) yellow onions
- 4 tbsp vegetable oil
- some salt and ground black pepper to taste
- a small fresh dill bundle, chopped
- 1-2 tbsp sweet paprika
- 1 tsp spicy paprika (optional)
- ½ tsp cumin powder
- ½ tsp dried coriander
- some sour cream for serving
Instructions
- chop the mushrooms into medium-sized pieces.
- cut the onions into thin strips.
- sauté the mushrooms with 2 tbsp of oil until golden, then set them aside.
- sauté the onions with the rest of oil.
- season the onions with some salt to taste while frying.
- add the chopped dill and fry for 2-3 minutes more.
- add the paprika and continue frying for about 30 sec, stirring
- pour about 300 ml/10 fl oz of water or vegetable broth and reduce the temperature to medium-low.
- season with cumin, coriander, and black pepper.
- place the mushrooms back into the pot.
- pour about 500 ml/17 fl oz of lukewarm water or vegetable broth; make sure not to pour excess liquid, it should only be at the level of the ingredients.
- place the lid and simmer ingredients for about 30 minutes.
- serve the mushroom paprikash over flour dumplings (the recipe is available here)
- top the paprikash with some sour cream.
- sprinkle over some chopped dill and paprika for a catchy look.
