Fresh Mushrooms

1) 1 kg/35 oz of fresh mushrooms (Portobello, Champignon, or a similar type)
2) 400 g/14 oz of onions
3) 2+2 tbsp of vegetable oil
4) some salt and ground black pepper to taste
5) a small fresh dill bundle, chopped
6) 1 tbsp of sweet paprika
7) 1 tsp of spicy paprika (optional)
8) 1/2 tsp of cumin powder
9) 1/2 tsp of dried coriander
10) some sour cream for serving

Hungarian Mushroom Paprikash with Dumplings

step 1: chop the mushrooms into medium-sized pieces
step 2: cut the onions into thin strips
step 3: fry mushrooms with 2 tbsp of oil until golden
step 4: set fried mushrooms aside
step 5: fry onions with the rest of the oil
step 6: season onions with some salt to taste
step 7: add chopped dill and fry for 2-3 minutes more
step 8: add paprika and fry for 30 sec while stirring
step 9: pour about 300 ml/10 fl oz of water and reduce the temperature
step 10: season with cumin, coriander, and black pepper
step 11: place fried mushrooms back into the pot
step 12: pour about 500 ml/17 fl oz of lukewarm water
step 13: place the lid and simmer ingredients for about 30 min
step 14: serve mushroom paprikash over flour dumplings
step 15: top the paprikash with sour cream
step 16: sprinkle over some chopped dill and paprika
