  • 2 cups leftover cooked pasta (any type)
  • 6 large eggs
  • ½ cup grated Parmesan cheese

  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions
 

  • Start by whisking the eggs in a bowl until they're well beaten.
  • Add the grated Parmesan cheese and smoked paprika to the eggs. Mix until everything is evenly combined.
  • Heat olive oil in an oven-safe skillet over medium heat.
  • Add the diced bell peppers and sauté for a couple of minutes until they start to soften.
  • Now, add the leftover pasta to the skillet. Stir it around for a minute or two to warm it up.
  • Pour the egg mixture over the pasta and peppers. Make sure the eggs evenly coat the pasta.
  • Reduce the heat to low and let the frittata cook gently for about 10 minutes, or until the edges begin to set.
  • Preheat your oven on high.
  • Place the skillet in the oven for about 5-10 minutes, or until the top of the frittata is golden brown and puffy.
  • Remove from the oven (careful, it's hot!), let it cool for a minute, and then slice it into wedges.
