  • 2 cups leftover roast pork, diced

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the chopped onions and sauté until they become translucent, about 3 minutes.
  • Stir in the minced garlic and diced red bell pepper. Sauté for an additional 2 minutes until the pepper starts to soften.
  • Add the cubed potatoes to the skillet and season with smoked paprika, thyme, salt, and pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.
  • Toss in the diced roast pork and cook for an additional 5-7 minutes, allowing the pork to heat through and meld with the flavors of the hash.
  • Once everything is beautifully cooked and aromatic, remove the skillet from heat. Garnish with fresh chopped parsley for a burst of color and freshness.
