For the sponge cake:
8 eggs
2 cups granulated sugar
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, melted
Zest of 2 lemons
1/4 cup sugared lemon pieces (small chopped)
For the lemon buttercream:
1 cup unsalted butter, softened
4 cups powdered sugar
Juice of 2 lemons
Zest of 1 lemon
2-3 tablespoons heavy cream
For the white icing:
3 cups powdered sugar
3-4 tablespoons milk or heavy cream
1 teaspoon vanilla extract
For assembly and garnish:
Sugared lemon slices
Fresh mint leaves

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy.
In a separate bowl, sift together the flour, baking powder, and salt.
Gradually add the dry ingredients to the egg mixture, mixing until just combined.
Stir in the melted butter, lemon zest, and sugared lemon pieces until evenly distributed.
Divide the batter equally among the prepared cake pans.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
While the cakes are cooling, prepare the lemon buttercream. In a large mixing bowl, beat the softened butter until smooth and creamy.
