When you think of grilling, the first thought that comes to mind is not grilled veggies. This is because many of us are prisoners of gastronomic habitats and we don’t believe that the recipes we don’t know can be very tasty!
Grilled vegetables are such recipes. Even if we have a lot of vegetables in our diet, most of the time we use them for salad or soup, maybe for stews and baked meat with vegetables.

Summer is the perfect time to fire up the grill and whip up some tasty, healthy grilled veggies. Most grilled vegetable recipes are easy enough for weeknight dinners but still pack plenty of flavors and nutrients. No matter what kind of vegetables you are using, just be sure to portion out your veggies so they don’t get overcooked. You can also use a grill pan or skillet to get similar results.
One of the many tasty side dishes that comes with barbecue is grilled vegetables. This is an easy and healthy way to add vegetables to your meals and still enjoy the great taste of grilled food. Some of the healthy grilling recipes I use include vegetables like zucchini, eggplant, and summer squash. Of course, tomatoes, bell peppers, and onions are often found in the vegetable skewers I fry on my grill throughout the summer and even fall.

When it comes to grilled vegetable recipes, carrots probably aren’t the first that come to mind. As with most root veggies, they take a while to cook through, meaning they’ve got to be tended to and turned frequently to get tender on the grill. The good news is that your hard work will be rewarded; the carrot’s natural sweetness comes out during cooking, a complementary foil to the smoky char achieved on the grill.
We love serving this veggie side atop creamy ricotta, with a punchy carrot top-based chimichurri for some brightness.
